Gerry's Chicken Enchiladas

I have varied this recipe based on what ingredients I have and on how much time I have to cook, but every time I get rave reviews! No one can get enough of these enchiladas! I prefer corn tortillas and my husband likes flour, so I usually make some of each in the same batch. I reccomend using the recipe for Tequila Lime chicken from this website to marinate the chicken before cooking.

Bread and Celery Stuffing

My husband, who has always refused to eat stuffing because he hated it, couldn't get enough of this stuffing! He was eating it for breakfast! I couldn't fit all of it in the turkey so I microwaved the rest, which wasn't as good but still a hit. The house smelled great when I was preparing it. YUM

Rosemary Roasted Turkey

My first time cooking a turkey and it turned out wonderful! This makes a fantastic Thanksgiving feast. I didn't have a rack so my turkey just sat in the pan, but it was still fantastic! I also covered the whole pan with foil to keep the moisture in and added oil/spices as I checked on it while it was cooking. Great leftovers!

Lime Chicken Soft Tacos

This is the best dish I have ever made! I didn't have red wine vinegar so I used white wine vinegar instead. I juiced a whole lime and added some zest as suggested by other reviewers. I added coriander (cilantro) and hot sauce to spice it up. I mixed everything together and let the chicken marinade in it for a couple hours before cooking and I am so glad I did! There was just the right amount of sauce after cooking. I reccomend adding the Fresh Salsa I recipe from this website. I didn't add cheese as the flavour of the meat is so good without it!

Fresh Salsa I

Brilliant! I was a bit turned off by the colour and texture of the salsa when it first came out of the blender. After it settled in the fridge for a while, I was more used to it. The secret is definately in roasting the jalapenos. I used an extra one and the spiciness is perfect! I used 3 fresh tomatoes instead of the canned peeled ones as suggested by a reviewer. This is much better than anything I could find at the store!

Cream Of Green Chile Soup

So many people thanked me for this recipe that I have to give it 5 stars. I added jalepenos to make it spicier and it was perfect. I liked it without the cream, so I left it on the side so people who aren't used to spicy food could add some. It got rave reviews with and without the cream. I used vegetable stock to make it vegetarian.

Slow Cooker Beef Stew IV

Delicious and healthy! I used all of the reviewer reccommendations and think all the fresh veggies make it the best. My favourites are sweet potato, green beans, mushrooms and peas- yum! I only used one onion and less butter than reccommended and it is still amazingly flavourful- mmmm!

House Fried Rice

This was a perfect base recipe! I used a package of frozen veges for colour and it presented well, and tasted amazing. I can't wait to try the left-overs! Very simple and easy to make, even my two year old daughter was able to help, much to her delight. I omitted the shrimp and chicken and didn't miss them. Thanks for sharing!

Restaurant-Style Tequila Lime Chicken

I have only used the marinade in this recipe, but it is the BEST marinade I have ever used! I shredded the chicken and used it in enchiladas and quesadillas. I didn't have liquid smoke so I used a splash of Worchestor sauce instead. I also left out the ginger. This smelled fantastic while I was cooking!

Corned Beef and Cabbage I

This was delicious and super easy, even though it took a while to cook, I think I will try in the slow cooker next time. My beef did not come with a spice packet, so used seasonings from another Corned Beef and Cabbage recipe from this site, mainly apple cider vinegar, sugar, pepper, bay leaf, nutmeg and cloves. I think they were definately worth adding!

Vegan Red Lentil Soup

Excellent. I used sesame oil because I didn't have any peanut, sauteed cubed chicken thigh fillet before adding the rest, added extra ginger, tumeric and a potato. I also added 2 cups of chicken stock. 30 min was plenty of time, even with potato. I think you could add sweet potato, carrot, spinach, peas, anything really, will try something new next time!
