Mexican Bean Salad

Reviewed: Apr. 3, 2007
Always a hit, I find this recipe easy. I prefer it with a bit less dressing, but everyone else always like it as is.

Carrot Cake III

This was a delicious and moist cake, but I missed the fruit. Next time I would add raisens or pineapple. Highly enjoyed!

Cream Of Green Chile Soup

Reviewed: Sep. 21, 2006
So many people thanked me for this recipe that I have to give it 5 stars. I added jalepenos to make it spicier and it was perfect. I liked it without the cream, so I left it on the side so people who aren't used to spicy food could add some. It got rave reviews with and without the cream. I used vegetable stock to make it vegetarian.

Spinach Chicken Parmesan

Reviewed: Sep. 20, 2006
My husband liked this more than me. Too me is was missing something. Maybe not "saucy" enough. This would go nice with a rice pilaf.

Tangy Lemon Squares

Reviewed: Sep. 17, 2006
Try 180 deg next time. Last time at 150 took too long and the juices didn't seem to evaporate enough. Taste YUMMY! Definately try this one again.

If you are using dried beans, make sure you use a pressure cooker! My mistake...

Mexican Cream Cheese Rollups

Reviewed: Jul. 5, 2006
These got a lot of compliments and I think they have potential. I would definately use more olives next time, as well as more salsa. They could also use something else but I'm not sure what...

Antojitos Minis

Reviewed: Jul. 5, 2006
I thought these would turn out like mini-tostadas, but they were not like them at all. The tortillas stay pretty soft even adding beans and chili powder, I thought the taste was pretty bland.

Fresh Salsa I

Reviewed: Jun. 27, 2006
Brilliant! I was a bit turned off by the colour and texture of the salsa when it first came out of the blender. After it settled in the fridge for a while, I was more used to it. The secret is definately in roasting the jalapenos. I used an extra one and the spiciness is perfect! I used 3 fresh tomatoes instead of the canned peeled ones as suggested by a reviewer. This is much better than anything I could find at the store!

Lime Chicken Soft Tacos

Reviewed: Jun. 27, 2006
This is the best dish I have ever made! I didn't have red wine vinegar so I used white wine vinegar instead. I juiced a whole lime and added some zest as suggested by other reviewers. I added coriander (cilantro) and hot sauce to spice it up. I mixed everything together and let the chicken marinade in it for a couple hours before cooking and I am so glad I did! There was just the right amount of sauce after cooking. I reccomend adding the Fresh Salsa I recipe from this website. I didn't add cheese as the flavour of the meat is so good without it!

Shrimp Lemon Pepper Linguini

Reviewed: Jun. 22, 2006
I modified this recipe with great success! I added spring onion (green onion) with the garlic and green beans (cut into 1" pieces) just before adding the liquids. The only herb I have is corindar (cilantro) which I substituted for the others, adding some dried basil. I added fresh ginger and chili powder to spice it up. Delicious!

Old-World Cabbage Soup

Reviewed: May 13, 2006
This was a good soup, easy to make, but a bit too tangy for me. I might try adding a bit of meat next time and perhaps omitting the tomato juice and using more chicken broth instead to make it less tangy and more savoury.

Restaurant-Style Tequila Lime Chicken

Reviewed: Dec. 12, 2005
I have only used the marinade in this recipe, but it is the BEST marinade I have ever used! I shredded the chicken and used it in enchiladas and quesadillas. I didn't have liquid smoke so I used a splash of Worchestor sauce instead. I also left out the ginger. This smelled fantastic while I was cooking!

Phyl's Salsa

Reviewed: Dec. 12, 2005
I will probably make this again, but use less sugar next time as it turned out a bit sweet for my taste. I will also definately include the seeds of the chilli peppers next time as it was not as spicy as I would have liked it when I left them out. I only simmered it for one half hour as I like my salsa more pico de gallo style.

Bread and Celery Stuffing

Reviewed: Dec. 12, 2005
My husband, who has always refused to eat stuffing because he hated it, couldn't get enough of this stuffing! He was eating it for breakfast! I couldn't fit all of it in the turkey so I microwaved the rest, which wasn't as good but still a hit. The house smelled great when I was preparing it. YUM

Green Bean Casserole I

Reviewed: Dec. 12, 2005
This turned out watery. I would reccomend cooking at a slightly higher temperature. I think fresh green beans would have been nicer than canned, which were too soggy. I added sauteed onion, but I think it only made it soggier.
