Zesty Slow Cooker Chicken Barbecue

Carrot Cupcakes with White Chocolate Cream Cheese Icing

These got rave reviews, but I used icing from Carrot Cake II as I prefer cream cheese. They were a bit tough to get out of the pan straight from the oven. I may try letting them cool in the pan first, then dumping them on the wire rack next time.

Stuffed Peppers My Way

This was good, but not great. I added some turkey mince, which I really think it needed. I think I used a bit too much rice and not enough tomatoes. I will use an extra tomato next time since it turned out a little dry and I like mine a little more "saucy" I've come back to edit this with more essential changes: one small can diced tomatoes, two fresh tomatoes, handful of mozzarella, frozen corn. Also the pepper only need about 20 min roasting time and stand them upright... I had mine upside down and they wilted and it was a pain to fill them. This is GOOD and the way I make it can stuff over half a dozen peppers!

Better Than Sex Cake II

I had higher expectations for this cake based on all the reviews. My cake wasn't as moist as I'd expected, but this may have been due to my fan forced oven. If you also have a fan forced oven, I would suggest using the whole can of sweetened condensed milk (and even adding more caramel, to taste, if you like) to make the cake more dense and rich. I would either try this or using a mud cake as a base, rather than devil's food.

Slow Cooker Beef Stew IV

Delicious and healthy! I used all of the reviewer reccommendations and think all the fresh veggies make it the best. My favourites are sweet potato, green beans, mushrooms and peas- yum! I only used one onion and less butter than reccommended and it is still amazingly flavourful- mmmm!

Fried Rice with Cilantro

I made the following substitutions: No garlic or green onions, so I cooked the chicken with a brown onion. One red chile instead of two green. After the chicken mixture cooked, I removed from heat and covered to keep warm. I then stir-fried a bag of Thai style frozen veges. When they were done, I added the rice and sauces. Then I made a well in the middle and scrambled two eggs (I doubled the entire recipe- plenty for leftovers!) and added the chicken mixture back in to warm. It was great, and quick and easy to prepare. Serve with lime wedges- the flavour really sets it off!

Chicken Chili Soup

I used the extra corn, less water, and crushed tomatoes instead of diced. I also added extra herbs and spices, chilli flakes, cilantro, oregano and basil. My husband loved it served on rice.

Banana Muffins II

These taste very plain, but that's a good thing! I added vanilla, like other reviewers mentioned, and its just the wholesome flavour of banana all the way. These are so yummy when they are warm.

Easy Asparagus

I found that I didn't have any moisture left at the end and might try blanching the asparagus for a few seconds before frying it next time. I omitted the crackers and they were not missed.
