Fantastic! I never follow a recipe to the letter but the only change I made to this was to add the rest of my can of tomato paste to the topping/glaze. My husband is such a huge fan of this recipe that he requested it again for next week. As I write this, I'm wishing we hadn't already eaten all the leftovers!
Update: I found a great technique for making this meatloaf. I double the recipe and pat it into a cookie sheet (size dictates thickness of "slices"), spreading the glaze on top. I bake at 350 for 15-20 minutes. Then I can cut it into portions and freeze the leftovers. Just wrap individual pieces in wax paper and pop them all in a freezer bag. They reheat wonderfully in the microwave! My hubby loves to take them for lunch and when I was on bedrest at the end of my pregnancy and then recovering from the c-section, having a freezer full of protein-packed meatloaf was a life saver!
Also, in recent batches, I've used garam masala for the seasoning and the rhubarb steak sauce from allrecipes.com in the glaze. Incredible!
