Turkey and Quinoa Meatloaf
Fantastic! I never follow a recipe to the letter but the only change I made to this was to add the rest of my can of tomato paste to the topping/glaze. My husband is such a huge fan of this recipe that he requested it again for next week. As I write this, I'm wishing we hadn't already eaten all the leftovers! Update: I found a great technique for making this meatloaf. I double the recipe and pat it into a cookie sheet (size dictates thickness of "slices"), spreading the glaze on top. I bake at 350 for 15-20 minutes. Then I can cut it into portions and freeze the leftovers. Just wrap individual pieces in wax paper and pop them all in a freezer bag. They reheat wonderfully in the microwave! My hubby loves to take them for lunch and when I was on bedrest at the end of my pregnancy and then recovering from the c-section, having a freezer full of protein-packed meatloaf was a life saver! Also, in recent batches, I've used garam masala for the seasoning and the rhubarb steak sauce from allrecipes.com in the glaze. Incredible!

Black Beans and Pork Chops
So easy and delicious. My husband and I both loved it! We are looking forward to trying it again with different types of salsa, especially a mango salsa! Endless possibilities for add-ins, and I think I'd like to try it with chicken, too. Thank you so much for sharing this simple, satisfying dish :)

Carrot Cashew Quiche
Huge success at our Mother's Day brunch. My picky mom and meat-loving hubby and step-dad took second helpings. Like other reviewers, I was bummed about the carrots and cashews settling on the bottom but clearly, it didn't bother my guests! Also, I only put in 1/3 c honey, which was perfect for me. I will make this again and recommend it to my vegetarian sister!
