Baked Potato Skins

My picky hubby loved these, and they were easy to make. I was worried how I was going to obtain that crispy skin without deep frying, and this recipe put my mind at ease. Well done!

Cream of Cauliflower Soup I

Oh, Lord have mercy. Loved this recipe! I made it the way the recipe called, then decided to throw in a bit of sausage . . . glad I did! It really made for a meatier mouthfeel. Thanks!

Creamy Italian Dressing II

Christy - GREAT recipe! I love the fresh clean flavors of the ingredients . . . I dare say that I'm reluctant to buy my dressings ever again! I used fresh oregano from the garden and a bit of black pepper. It was a fun recipe to play with!

Hot Fudge Sauce

I LOVE this sauce! I made it as is and thought it was perfect . . . loads of creamy clean flavor. I made it a second time and added a touch of coffee crystals and loved the mocha flavor. Great job!

Cake Mix Cookies I

These were just okay. I wanted a quick-mix cookie to give to someone else, and they don't mind the "chemical" taste that I get whever I use cake mix. Even a bit of vanilla couldn't take the taste away. Oh well. The husband likes 'em, and so will my friend.

Cinnamon Ice Cream

A beautiful recipe! Another reviewer called it a Snickerdoodle made into ice cream . . . indeed! So here's what I had to change. I didn't have half and half, so I used whole milk. Also, I used 3/4 cup of Spenda rather than sugar. Couldn't help but think that if there was a difference, lord knows I couldn't tell. Oh, and I used Veitnamese cinnamon (sp?) . . . it has a bolder flavor profile, and really holds up well in this recipe. Thank you!

Portuguese Chourico and Peppers

Lovely reminder of my time in the Azores. Here's a tip . . . remove the skins from the peppers first for less pepper "bite" and a more silky mouthfeel. Freezes well!

Slow Cooker Beef Barley Soup

A terrific recipe. I used leftover roast and a ton more veggies and the results were outstanding. Next time, I'll consider adding a bit of hot pepper to add a little heat to the mix.

Pear Bread II

Had 3 very ripe pears, which helped turn this into a very moist delish cake. Used half apple sauce and half oil and half brown and half white sugars as recommended by others, and baked in a bunt pan. My office will delight in this!

Strawberry Ice Cream

The taste of the berries was like nothing I can buy, and I USED to buy nothing but premium ice cream. Next time, I'll try using a bit less sugar. And believe it or not, using the best, most ripe berries made a big difference.

Lebanese Lemon Salad Dressing

I've never been inspired to write a review for a recipe, but this one did it!! It's flavors are bright, clean, and enlivens any garden salad. Since I grow my own veggies, I'm very selective about what I dress them with, and this recipe, BY FAR, is worthy of my home-grown food. Easy, tasty, not to tart, not too oily. Beautiful!
