Wow! Not only did I love this soup when I made it, I froze the leftovers and they were absolutely incredible a few weeks later. Only things I changed were smaller cutting of veggies (my family doesn't like to "taste" the vegetables) and I didn't have veg juice, so I just used more veg broth. But it was great. The "special ingredients", like the mustard, lemon and veg broth, really give it great flavor. I just opened a can of $$ organic lentil soup and it was so disappointing in comparison to this lentil soup. So I'm going to get a ham hock right now to make it!
