Love to train...Love to eat!

Howdy, everyone! I'm a full-time Professional Triathlon Coach living in Atlanta, GA. Not only am I a coach, I am also a triathlete. I am also a wife, sister, daughter, business owner, boss and friend. I need to fuel my body in a healthy way for coaching,
training and living my life to the fullest. My days are busy, but I don't want to use that as an excuse for not eating nutritious meals. This blog is dedicated to sharing healthy meals that are quick and include whole food items as much as possible.
For my first entry, I want to share a recipe that was given to me by one of the athletes I coach named Jessica. I made one change because I ran out of quinoa. I actually made a double batch because I took half of it to another one of my athletes who
took a spill on his bike and separated his shoulder. Ugh.
Spicy Quinoa Salad
4 cups water
1 1/2 cups of organic red quinoa
1/2 cup of pearled barley
2 jars corn, black bean and pepper salsa (I used Trader Joe's Cowboy Caviar.)
Fill large pot with water. Add quinoa and barley. Stir. Bring to a boil. Cover and simmer for 25 - 30 minutes or until all the liquid is absorbed. Stir occasionally. Add the salsa. Stir to combine. This can be served hot or cold.
