Curried Coconut Chicken

I've made this several times and they always lick the plate clean! One of my kids has autism and serious sensory issues: SHE LOVES IT! I followed the "most critical" review and did not add the tomato sauce. It was awesome.

African Curry

I have a VERY large family and there is no way to make a recipe like this (even doubled) without them coming to make sandwiches 30 minutes later. SO....I used this as my base recipe and just after the onions had browned, I added peeled, washed and chopped carrots, potatoes and sweet potatoes and allowed them to cook for about 10 minutes before adding the curry, etc. Because of how much room it took in the pan, I transferred these ingredients to a crockpot and then browned the chicken in olive oil with the remnants of the earlier mixture still in the pan. Once slightly browned I added the chicken to the vegetable and curry mixture already in the crock pot, added a little hot water and then covered and cooked on high for 4 hours. All I had to do following my errands was make rice to serve with it. (Half the family ate it with Basmati rice and the other half ate it with long grain brown rice!) EVERYONE was licking their plates clean. TOTALLY making this again! The chicken doesn't make or break it. We have Hindu guests coming for dinner and I'm making it the same way....only without the chicken. THANK YOU FOR SUCH A GREAT RECIPE!

Shrimp Fettuccine Alfredo

I think that this recipe is a fabulous base...we used it with imitation crab meat and added shrimp. I added fresh basil from our garden and used thick whipping cream in place of the half and half. (What I had on hand.) My kids and husband DEVOURED it served over penne and have begged me to make it again. Definitely easy and right up my alley in the time-consumption department. A keeper for sure.

Gumbo Style Chicken Creole

I made this last night when we only had 6 pieces of chicken and 7 mouths to feed. As with many of the other reviews, I used butter instead of oil and omitted the mushrooms and Worcestershire sauce. I also forgot to pick up celery while at the grocery store, so I just added 1 tsp of celery seed. Other additions: Creole seasoning, a little extra soy sauce and 2 serrano peppers. Everyone scarfed it up. It rocked. Thank you for a great jumping off point. Next time, I'll add okra.

Amish White Bread

My 14 yr old son wanted to make bread and this was the recipe we chose. We followed someone else's suggestion to cut the sugar to only 2 TBLS and it was a wise decision. This recipe is beyond easy and the bread comes out perfectly every single time. My husband is a baker/pastry chef and he was quite impressed with our son's bread and actually took the recipe from him to use at work. The beauty of the whole thing? I NEVER have to make bread anymore....my TEENAGER DOES IT! Thank you, Peg, for submitting it.

Sweet Potato Pie I

I made this recipe with the following tweaks: I used 2 lbs of sweet potato and I tossed them into the oven to bake instead of boiling. While it was in the oven, I made my pie crust. Also, I added a pinch of ground cloves to the mix and because I don't have a mixer, I just dumped it into the blender and flayed it a bit in there....poured right into the pie crust and into the already hot oven (from baking the sweet potatoes.) It was AMAZING! Even my 16 yr old daughter with Autism who has severe food texture/smell issues ate it and LOVED it! We will DEFINITELY be making this pie again and again! Thank you.

Chantal's New York Cheesecake

I made this cheesecake (AGAIN) and (AGAIN) rocked our world. The kids were licking the pan clean. (AGAIN)(*ONLY change: I used graham cracker crumbs and measured 1 and 1/4 cup plus 1/4 cup sugar plus 1 stick butter for the crust. If you do this DO NOT GREASE THE SPRINGFORM PAN OR YOUR WHOLE HOUSE WILL SMOKE!) Chantal RULES!

Molasses Cookies II

As a result of all the other complaints of saltiness in the reviews, I opted to cut the salt to 1/2 a tsp. Also the bake time was not sufficient. They weren't soft and chewy after 11 mins, they were still raw in the middle. So, the second batch we made the balls no bigger than melon-baller size and increased bake time to 12-14 mins. They turned out a bit crunchier and the shape was perfectly round. Like they were factory made. The taste was outta this world. A HUGE hit with my kids and the neighbors kids and my niece who was visiting. I've even had to translate this recipe into Arabic for my neighbors who also gave it 2 thumbs up! (We live in Egypt!) Thirty Minute Cocoa Cake With Quick Cocoa Frosting

This cake is very heavy on the cinnamon aftertaste and too rich for even my chocoholic children. I'd suggest cutting back on some of the sugar or perhaps serving with a shot of insulin.
