Onion Shortcake

My family has been making this recipe for over 60 years, passed down from my grandma. YUMMY! We use butter instead of vegetable oil and we omit the mayo.

Octoberfest German Potato Salad

I am so glad there are leftovers today! I made this last night for dinner and I followed this recipe exactly. It was wonderful! I thought the sauce was going to be too runny, but when you add it to the potatoes and let it meld in the fridge, it soaks up the starches from the potatoes and gets thicker. I served with a Buffalo BBQ meatloaf and they complemented well.

Middle Eastern Rice with Black Beans and Chickpeas

I found this recipe to be a little bland. It's missing some sort of acid, like lemon juice or something. I had to top with salsa and sour cream for added flavor. I agree that raisins would be a good addition, but I'm not a super-fan and won't be making it again.

Sweet Spicy Wings

Why have I been going out for wings? I had no idea wings could be awesome without the deep fry!!! This recipe was full of surprises! I followed the recipe exactly. I wasn't sure about the honey in the sauce so I divided it and only used 1/2 the honey in 1/2 the sauce, the other half was a traditional buffalo sauce. The sweet sauced wings were gone first over the traditional buffalo. I'll do that again, b/c they were good. I did find the sauce to be a little too buttery, so next time I will reduce the amount of butter, but still 5 stars as written. (FYI, I used Franks Red Hot for the hot sauce).

Fried Green Tomatoes

I'll explore another recipe before making this one again. However, I can see why other people rated it well... Pros: This recipe has ingredients most pantries have "in stock". The batter sticks to the tomatoes and gets perfectly crispy. It's easy and tastes fresh, not heavy or overly greasy for a fried dish. Cons: The breading lacked flavor. Perhaps using a seasoned breadcrumb instead of the crackers would help? Or adding spices to the crackers or flour? It's just not flavorful enough for me....

Cranberry Sauce

Very yummy and very easy! Won't add to your Thanksgiving day stress! Based on a Thanksgiving show on the Food Network, I modified this recipe. I used 1/2 white and 1/2 brown sugar, added 1/2 tsp of cinnamon, and the zest of one orange which I shaved off with a veggie peeler, then fished out later. I want it again for Christmas!

Split Pea Soup

Awesome! substituting Smoked ham hock for the ham bone and chicken stock for the water are musts! Also, omit the potato as it soaks up the salt which is needed for seasoning in the soup. It thickens as it sets in the fridge and since it makes a lot of soup, be prepared thin it out the next day. It freezes well too. I freeze in single size servings so it's ready to take to work for lunch! (by request, I'm taking in an extra serving for a co-worker. It's that good!!!) Enjoy!

Tex-Mex Grilled Corn Salad

I took this to a Mexican themed dinner party and received rave reviews! With all of the veggies, it tastes so light and fresh. (even in the middle of winter!) Only 1 change, I didn't have Chipotle Chile Powder, so I used 1 canned Chipotle Chile and 2 Tbsps adobo sauce. Super recipe!

Bran Muffins I

I modified this recipe to be compliant with Phase 2 of the South Beach Diet (low sugar and "good" carbs). I substituted 1 1/2 Cups unsweetened applesauce for the shortening, Splenda for the sugar, and used whole wheat flour in place of the all purpose flour. I added 3 Tbsps Smart Balance butter to enhance the taste since fat is a flavor transfer. In addition, I reduced the baking soda to 3 tsps and added 3 tsps of baking powder. Due to my preference, I used 3 Cups Raisin Bran and 3 Cups of All Bran. The muffins came out excellent! Next time, (and there will be a next time!) I will add 1 Cup of raisins as others have suggested. Enjoy!

Burrito Pie

Worthy of the great reviews already received! I incorporated many of the previous suggestions. I doubled the cheese and used a jar of salsa in place of taco sauce. Also, instead of mixing the beans with the meat, I used only 1 can and spread the beans on the tortillas (like ricotta in italian lasagna!; this provided a great texture. Thanks Kathi for the fantastic recipe!

Cooking Light magazine's Indian Chicken Curry

Although, I made this dish for a friend who requested the recipe, she probably just wanted to be nice! Considering the number of spices in this dish it is surprisingly bland. I nearly doubled them all (less the red pepper!) and was still disappointed in the flavor. Save yourself the time and pick another recipe!

Feta Chicken

This recipe was so fast and delicious! Instead of placing the chicken on top of the bread crumbs, I rinsed with water (so the bread crumbs would stick) dredged both sides of the chicken in the crumbs. I stuffed with regular feta cheese (what I had), and drizzled 2 Tbsp melted butter over the chicken. Fantastic! I will certainly make this recipe a regular!

Lime Chicken Soft Tacos

My husband and I really enjoyed this recipe. It was so fast and simple! I too used cilantro in place of the oregano and cut 2 chicken breasts into strips instead of cubes; this reduced the cooking time. The flavor of the chicken is fantastic. If using more than the equivalent to 2 chicken breasts, you will probably want to increase the quantity of the sauce. I've added this one to my keeper list and will certainly make this recipe again.
