White Bread I
I used the dough cycle on the bread machine and then kneaded the dough a few times, rolled it out to a rectangle, rolled it up, placed it in a 9x5 greased pan, let it rise about 45 minutes, then baked for 35 min at 180C in a mini oven. The bread came out evenly light brown. I used half of it the next day for French Toast - and it was excellent! It was easy to slice and tender.

Chocolate Chip Peppermint Cookies
Wow! I'm a sucker for mint and chocolate, so this may be a biased opinion, but these cookies were incredibly delicious! I used 1 3/4 c flour and 1 cup of Hershey's special dark choc chips. Cookie sheet didn't need greasing. Living abroad, I have a mini-oven - so putting these at 180C just above center for 12-15 minutes was good for me. They came out soft, and the next day are still soft.

Gingerbread III
I used 1 t ginger, 1 t cinnamon and 1/8 t cloves, 1/2 c melted butter. I reduced the molasses to 1/4 c and increased the brown sugar to 1/2 c. I made it as 12 muffins, baked at 180C for 25 minutes. Oh, and I put raisins in half the batter. Delicious!
