Golden Sweet Cornbread

This is the best ever cornbread recipe. I did take the suggestion of others and added a tad bit more oil and my daughters suggestion of adding about a cup of corn kernels. This is definately a keeper! Thanks!

Country Apple Dumplings

Yumy, yum, yum. My family loves these. Only thing I do differently is cut the butter in half and sprinkle a little more cinnamon on the top before baking.

Grandma Johnson's Scones

These are so yummy. Split the batch into 2. Made half with chocolate chips and the other with cranberries. To avoid over-mixing, after combining ingredients, flatten dough into a disk and spread on filling. Fold in half and then in half again. Form into a disk and using a pizza cutter, cut into wedges. My 6 yo had a blast helping and eating!

Best Ever Corn Muffins

This came out really good. My daughter is on a wheat free, gluten free, sugar and dairy free diet. With that said, I used an all purpose rice flour mix, soy milk and splenda. I also added a bit of honey to balance out the splenda. I put the mixture into a 9-inch pie plate and baked for 25 min. It turned golden brown and evenly baked. We all loved it. Thanks for a great recipe!!

Slow Cooker Lentil and Ham Soup

This soup is so good. I couldn't even wait the 11 hours for it to cook, so I turned it up to high for a couple of hours and then down to low. I too added a can of diced tomatoes instead of the tomato sauce. I also added hot pepper flakes, spinach and instead of ham used chicken garlic and artichoke sausages that I cut into pieces. This is a keeper. Thanks!!

Spinach-Stuffed Flounder with Mushrooms and Feta

This is a very simple recipe. I added some salt, pepper and dill to the filling and sprinkled the top with paprika and lemon juice. Very delicious. Will make again.

Pumpkin Chocolate Chip Muffins

These are wonderful. I used pumpkin pie spice because that is what I had on hand. I used mini chips so the chocolate wasn't over powering. My children loved them as did the neighbors. They are great the next day split open, toasted with some margarine. Yum!!

Passover Sponge Cake

I used this recipe the last 2 years and I am back to make it again. It is perfect. Just like my grandmother used to make. I also cut it up to use in other recipes for layers and bottoms, such as cheesecake.

Chicken Tortilla Soup I

This soup is amazing. I did use a hand blender to puree the soup just a bit before serving. It broke down some of the hominy (which were quite large) and gave the soup a wonderfully creamy texture. I served it with chopped green onion, chopped avocado, sour cream and shredded cheddar cheese. My girls had a great time "topping their own creation". Will make it again and again. Thanks for a wonderful recipe.

Chantal's New York Cheesecake

Absolutely fabulous! I am a displaced New Yorker now in North Carolina. Deli's are non-existent along with any type of good northern cuisine. Made this recipe and it was a winner. I did wrap the bottom of the pan in tin foil and use a water bath, however, the water leaked into the pan. The cake was a little soft on the bottom, but nonetheless was loved by all! Next time I will omit the water bath since the top cracked anyway. Thank you for a winner!
