Chef John's Italian Meatballs

This was delicious! I will definitely be making these again. I halved the recipe, using 1 lb ground beef (I didn't have any pork on hand) and got 18 meatballs. I added the garlic to the onions about halfway through the cooking time, and used Italian breadcrumbs. Thank you, CJ!

Avocado, Tomato and Mango Salsa

This recipe is delicious! I made this once last week, but I realized half-way through that I was out of jalapeƱo, so I had to substitute green chiles. However, one mango wasn't enough. I would definitely recommend doubling the mango. Even with these substitutions, this was delicious and gone in a few days! I am making this again tomorrow, so I will double it and use 4 mangos instead of 2, and use jalapeƱos to enhance the flavor. Thank you for this recipe!

Peanut Butter Frosting

This is my new go-to recipe for peanut butter frosting! I didn't have either milk or cream, so I used half-and-half and it worked beautifully. I also followed other suggestions and cut the sugar in half. This piped beautifully! I made chocolate cupcakes with a mini Reese's PB cup in the middle to go with this frosting. It was a huge hit! My mom commented that it tasted like peanut butter fudge, it was that good! Excellent recipe. Thank you, Suzanne!

White Chocolate, Chocolate Cookies

This recipe was delicious! I followed another reviewer's suggestion to add a bit of vanilla and salt. I didn't have white chocolate chips, but I needed a quick cookie recipe to bring to a reception after my music camp's performance, so I used peanut butter and chocolate chips. They were absolutely phenomenal! Definitely a keeper recipe.

Sweet and Sour Meatballs II

This is my go-to sweet n sour meatball recipe! I follow the recipe almost exactly, except I scale the recipe to 6 servings to use 1 lb ground beef. Fills a 9x13 pan and is perfect for dinner for a family of 5! The only change I make to this recipe is that I use a bit of finely chopped fresh yellow onion in place of onion flakes. Don't worry, the sauce will sound and smell nasty at first but as it bakes with the meatballs the flavor really mellows out into a delicious sauce. I make these with the nutmeg, but I've left it out before and it turned out perfectly fine. Honestly, i cant taste a difference... But i use it anyways! : )These meatballs passed a 6 and a 9 year old, so it has to be good!! ;-) Serve over cooked brown rice for a delicious and hearty meal.

Easy Italian Herb Focaccia

This is my go-to focaccia recipe! However, I made some changes, a couple based on other reviews and a couple I came up with on my own. First: I use Italian seasoning in the dough, mixing in about 1 tsp. or so. Second: I finely chop fresh rosemary, 2 or 3 sprigs, and sprinkle on top before baking, along with a light drizzle of olive oil and a little (OK, maybe a lot) of grated Parm. I don't usually have other fresh herbs on hand, but a couple times I did have some thyme, oregano, and basil in the garden. A nice blend of these chopped finely and on top is delicious! This recipe is extremely tasty and extremely easy! With these minor changes, definitely a 4-star recipe!

Chef John's White Sauce

This is a great, basic sauce! I followed the recipe up until the cayenne pepper, thyme, and nutmeg. Instead of adding those, I replaced them with 2 cloves of fresh garlic (minced) and maybe 1/2 teaspoon or so of dried oregano (I didn't really measure it :-)). I used this recipe to top some pasta and grilled chicken marinated with a simple Italian marinade -- absolutely delicious!! Also, I have used this recipe with the chicken, pasta, and also small bits of steamed broccoli. Thanks for a great recipe, Chef John!

Chocolate Crinkles II

This recipe is delicious! While everyone raved about them, I personally found them a tiny bit dry. However, they are fudgy, moist, and overall, delicious! I took these to a cookie exchange, 2 dozen cookies to maybe 10-12 people, and there wasn't a crumb left when I went home! Thank you for a wonderful recipe, I'll be using this again and again!

Amish White Bread

I have been using this recipe for years, and now that I am 13 I finally was able to sign up. I now have this recipe memorized! Although 6 cups is a good starting point of the flour measurement, I never measure the flour. Using my KitchenAid mixer, I simply add in the flour approximately 1-2 cups at a time, mixing well after each addition, until the dough forms a sticky ball around the bread hook attachment. I have found that this is a wonderful recipe for both dinner rolls and cinnamon rolls. Also, it adds a nice flavor and glossy top if you brush the loaves with melted butter after baking. Thank you for this no-fail recipe!
