Dead easy! I skip cilantro because I don't care for it, but otherwise a great party recipe. Easy to alter the ingredients for more fun. Yum! Yum! All gone!

Cod with Italian Crumb Topping

This recipe needs salt and seasoned breadcrumbs. I think it also needs the topping to be damp so it sticks. I think mixing the egg or lemon mayo in with the topping to make a kind of slurry to top the fish would alleviate the dryness problems that the oil alone can't quite manage. Garlic mayo would also be tasty. I can't recommend to follow this recipe exactly as written, but relatively minor technical adjustments will make it better.

3 2 1 Honey Mustard Sauce

Good, but let me make a recommendation. To speed this process up and eliminate the need for overnight refrigeration assemble the ingredients in reverse order and heat up the honey! Honey and lemon first. Microwave on high until honey/lemon is hot and very fluid. Then add mustard and mix. (I reversed the quantities. I like Dijon better, a personal thing) Then mayo and mix well. The residual heat from the honey ends with a slightly warm sauce, but without a 12 hour delay.

Awesome and Easy Creamy Corn Casserole

OMG this was so good!!!! I reduced the butter by a tablespoon and added a cup or so of finely shredded cheddar and a small can of green chilies that I drained slightly. Beautiful golden "crust" and soft, moist interior. However, mine was in the oven for a hour with the heat on to cook. At 45 minutes a skewer still looked too damp. Probably because I added stuff. :P Residual heat let this sit in the oven to hold for dinner while I cooked other things and it reheats in the microwave beautifully. I will absolutely be making this again since this was a test run on new recipes for Thanksgiving. YUM!

This is awesome. We don't even miss the meat. This recipe is super adaptable to whatever fresh veg you have. Once the chickpeas and lentils and spices are in, the rest alters easily!

Super-Delicious Zuppa Toscana

I used hot Italian sausage and skipped adding more red pepper. Also used a small onion and made up the lack with shallot. Milk with cornstarch and baby bok choi as the green. All changes based on what I had in the fridge, since I made this on the spur of the moment. Still, super good! Served with rustic garlic bread and YUM YUM YUM! Will absolutely make again, though maybe better pantry planning next time!

Delicious Ham and Potato Soup

I made this exactly as stated. It was good. A very nice basic recipe. It isn't exciting or out there to wow you with flavor, but it is good. Overall I thought it was a bit bland and one dimensional for my palate but DH ate two bowls and told me it was "a keeper" I will start modifying it from this point to suit, but it has a good core for exploration.

I have made this a few times now. I now add a tablespoon of extract for flavor, (Almond is my fav, but Vanilla is DH's) plus all kinds of combinations of fruit, nuts and the kid favorite chocolate chips. It is pretty much fool proof. My family and friends love them. Thank you so much for sharing this recipe.

Chicken Salad Pitas

I ditched the cucumber (which I don't care for) in favor of melon and added feta cheese crumbles when I ran out of mozzarella.Kalamata olives are the way to go. Seriously good! DH devoured two in no time! Will make many more times!

Rempel Family Meatloaf

This was totally awesome. My husband and I loved it. It’s worth six stars. Changes: Used dehydrated onion flakes instead of onion soup mix. That reduces the salt and I didn’t have it. ;) Added 3 Tbsp of steak sauce instead of two, and used an 8 x 12 pan so we can remove it from the dish. Oh yeah, its meatloaf so we use our hands to mix it up. I definitely recommend using a 93/7 ground beef over an 80/20 as the cheese can produce a lot of oil and the very lean meat produces (shock) less grease. Super yummy. It is going in the file!

This was great! I made some replacements in the recipe because I didn't have some of the ingrediants. Added garlic salt and omitted celery salt. Used 1 TBSP Malt viniger and omitted lemon juice. The acids can change as long as one keeps in mind the strength and retains the correct ratios. WAY GOOD! YUMM!.
