Tequila Cocktail Sauce

BEST COCKTAIL SAUCE EVER!! It rocks! My only suggestion is to use good tequila. I tried it once with Mezcal, mostly because I wanted to eat the worm at the bottom of the bottle (lol)and it was still good. But the next time I used Anejo... yup, that took it to the next level. Very good cocktail sauce11

Meat-Lover's Slow Cooker Spaghetti Sauce

Fish Tacos

First, let me preface... I'm not a fish lover. I'm the one that always gets the bone! But this recipe hit me on two levels. I mastered deep fry and I loved the tacos! Everyone is right, the sauce makes it! So delicious! Gave me great ideas for fish and chips, too! Loved it!!

Ten Minute Enchilada Sauce

Da bomb!! That's, by far, the best and fastest enchilada sauce I've made in a long time!! Change nothing, cook as the recipe directs and you got yourself an enchilada sauce that the FDA needs to know about!

Cajun Seafood Pasta

Great recipe!! I enjoy heat but I'm not a mouthburning lover, so I eased up a bit on the peppers. It was still hot but enjoyable to my taste buds. I didn't thicken the sauce because first time out I wanted to honor the recipe. And I thought it was perfect. I wouldn't add flour to it at all. I'm not sure what people think this sauce is but it's perfectly fine. Actually, way better than fine. It's Cajun culinary magic!! Thanks, Star, for reminding me that I need to get my cajun butt back to N'awlins!

Chicken Enchiladas with Creamy Green Chile Sauce

The enchiladas in this recipe are great!! But it's the sauce that goes over them that take them to nirvana. I use the sauce for all kinds of things... burritos, chimichangas, you name it. It's simply delectable!! I change it up from time to time, maybe using jalapeños or a different cheese but it turns out to be culinary magic every time!

Mexican Sour Cream Rice

Great rice dish! My daughter's favorite!! She's at that age where I can do nothing right anyway but this rice makes me a heroine. I might throw in some other ingredients from time to time if I don't have everything. I've used cheddar and gouda and pepper jack, too. I swear to god, I could lace this with strychnine and it would still be the favorite at every meal!!

Best Baked French Fries

Gotta be honest, I'm just not a big fan of baked fries but not having mastered the art of deep frying, this is my default home fry. These are pretty freakin good, I must say!! I do spice them up a bit but other than that, these are perfect!

Chef John's Italian Meatballs

Most times I don't rate Chef John because all his recipes work and taste exceptional. I've learned so much from this man, he's improved many of my recipes with the chef that I see on TV!! LOL These meatballs follow, as well. The only thing I do differently is add bison or some other big game meat in there. It always makes people go "Hmmm... what makes these meatballs so good?" I never give away that Chef John helped out and never tell about my other meats, either. Are you kidding me? No way! Then everyone will cook as good as me!

Mexican Street Vendor Style Corn Salad

What a great idea!! It did taste like those corns I got in LA! I missed those so much. I still do them at home but I like them best off the grill and that's just a heap of trouble. This is a quick fix for the memory. Thank you Parizienne!!

Classic Restaurant Caesar Salad

A salad to die for. I no longer have to go to a nice restaurant to get a table-side made Caesar Salad. I can now do it myself and it tastes wonderful!! Hey wait... I still like going to a nice restaurant. No one tell my secret!! Thanks for the recipe Sarah!!

Chicken Tortilla Soup V

I did this one in a slow cooker, too. I threw it all together, put it on low for 6 hours, shredded the chicken and it was a fantastic soup!! It seemed a little thin for me... but I'm no soup lover, so all soups seem too thin, to me. So I added about a 1/2c of monterey jack and threw some chopped cilantro in, as well. Winner winner chicken dinner!! As a friend of mine said to me. LOL

Seven Layer Dip

Great... I'm a Saints fan.... So I made this for the "other" fans in my house and it was fantastic!! It would be appreciated if you could figure a way to get some black and gold going there. Hmmm... black olives and cheddar... got me thinkin', which is what a great recipe does!! Way to go on this winner!!

Best Steak Marinade in Existence

OK... sometimes I don't have basil or worcestershire or whatever and I make due with something else. It just doesn't matter, this marinade truly rocks!! I have actually made it right a few times and I still love it! This one is a definite keeper!! Way to go Kookie!! I'm a fan of yours, for sure!

Tomato Bisque II

This is a great recipe! I'm not a soup lover myself but a hangover had me crying for something soothing. LOL This was it. I didn't have fresh tomatoes either and opted for cans of tomato sauce. I also threw in a can of diced tomatoes for a chunkier texture. It was awesome!! Thanks for a winner Judy!!

As others suggested, definitely a higher heat and a longer cook time. But the recipe? Good god I love pig!! Coat it in sugar and well... I'm just hoping there's a 12 step group to get me through this binge!!

Pork Tenderloin Diablo

I rate this a 5, even though on my plate, it was a 3.5. But that was fully my fault! I dig on horseradish and dijon. I was a little heavy handed when adding them into the sauce. But I could tell, had I done it right, it would've been a complete winner!! I will do it right next time and enjoy it much more, I'm sure. Oh, and the cooking time, nailed it!! It was perfect. Chef John hasn't led me astray yet. LOL
