Sweet Pork Slow Cooker Chili

This chili is sweet and that's how I like it!! I heated it up a bit more with some ancho chiles in odobo sauce, as well. As for meat, I use more than the ground pork. I use Italian sausage (spicy), andouille, gr buffalo, gr beef and gr lamb. I do believe the heavens shined down on me while making it because everybody sat back at the end of the meal, with that happy, fat and dumb look on their face! Thanks for making me the hit again!!!

Tequila Cocktail Sauce

BEST COCKTAIL SAUCE EVER!! It rocks! My only suggestion is to use good tequila. I tried it once with Mezcal, mostly because I wanted to eat the worm at the bottom of the bottle (lol)and it was still good. But the next time I used Anejo... yup, that took it to the next level. Very good cocktail sauce11

Sausage Gravy

Simple, yet lovely. I added a bit of hot sauce to bring some heat to it. I've done it both ways. If I use spicy sausage, then I don't. One time I made the mistake of using one of those really hot sauces, called Brand New A**hole... and ya, they call it that for a reason!! LOL I killed that poor gravy in a very quick death!!

Cilantro Tomato Corn Salad

I'm not quite sure if this is a 4 star, but it wasn't a 3 star either. Somewhere in between. The mix of veggies was definitely a hit. The butter sorta laid a thickness on it that just wasn't what I was hoping for. I wanted something lighter. I'm not sure what I'd do to it, to make it pleasing to me and my family but I'm not giving up on it. I'll keep trying and keep y'all posted!!

Diane's Colcannon

Grew up eating my mother's colcannon and it rocked hard! I'm not sure if what I'm making is still colcannon because I strayed from this recipe a little bit. When I boil the potatoes, I thrown onions and garlic in the water, with salt. I hate passing up an opportunity for flavor! Then I add sour cream to the mashed potato part, too. And instead of milk, I use heavy cream. More bacon is never a crime at my table, either. So, if you still consider it colcannon, after my changes, then this is the best colcannon, outside of Belfast!!

Adobo Arequipeno

Most of my family loved it. The heat was beautiful. My daughter didn't care for it but she's a spice wuss, so don't put to much stock in that. After tasting it, I decided to throw some sour cream in, to soften the heat. It worked but I'm sure it's no longer Adobo Arequipeno.

Accordion Bread with Three-Cheese Spread

I hate to say anything bad about a recipe, so I'll just say that I must've messed up somewhere. The cheese spread looked very unappealing. It tasted good if you can get past that. I don't know what I did wrong. :(

Shrimp Embrochette

I had the shrimp lined up and ready to go in the oven when my husband came home. He looked at that and said he hoped Rabbi Keller wasn't coming for dinner!! I told him it was cool, I used Kosher salt. LOL OK, all kidding aside, these little chunks of heaven will kill any seafood craving you might have. The only change I made was sprinkling a little Old Bay over the top. Serve them with those scrumpy garlic cheese biscuits, like the one's from Red Lobster, a side of rice pilaf and you got yourself a meal to be very proud of!! Loved it!!

Bacon Wrapped Brown Sugar Smokies Dipping Sauce

I add some horseradish to taste, to give it just a little bite. After that, just know, you can't stop. They're so freakin' addicting! I think I ate 4 or 5 packages of lil smokies before I realized I was bogarting the appetizer!! Many were angry with me but that's cool. I went to bed with sweet smokie dreams!! LOL

Cajun Baked French Fries

After laying the potatoes on the baking sheet, I noticed I should've sprayed it. The fries I was able to scrape off were excellent! This is my new go to for fries!! Just spray your pan!!

Sarah's Applesauce

Thank you!! Easy, easy, easy!! Y'all are right!! I'll never again buy apple sauce in the store. This stuff rocked hard! I added a jalapeno to warm it up a bit and it was fantastic! I didn't take the advice that others had given about using less water and ended up draining some at the end, which was fine, it worked out great!! Oh, and I did cook it longer, hoping to evaporate some of the water. I'm not sure if that made it better or not... it was just so good! So good, in fact, I think I'll make some more today!!

Famous Taco Seasoning Mix

I didn't change a thing! It's perfect! My only issue is that I tend to use too much of it and it doesn't taste right. I'm still trying to find that sweet spot! But having a tasty time doing it!!

Megan's Amazing Spaghetti and Meatballs

Megan is right! It is amazing! I put about a 1/4c of shredded parm in the meat balls... oh and they were made with gr beef, gr italian sausage and gr lamb, as well. This made them tender and so yummy! Had enough leftover to keep it for the weekend and something to munch on! Way to go Megan!

Pineapple Grilled Pork Chops

If there are better grilled chops out there, please don't tell me!! I'd be eating them all day, every day! This recipe rocked so hard! The chops were tender and sweet. They literally melt in your mouth. Wanna be the hit of your Memorial Day BBQ? Serve these chops! I doubled the recipe and took a few of the rings and chopped them up for the marinade. Ya... in fact, I might have to eat them again tonight!! Way to go!! Definite winner!!

Easy Cucumber Salad

Great cool summer salad!! Absolutely loved it! Unfortunately, I couldn't find the dill I had bought for it, so I used cilantro instead. Oh ya... cilantro has that pretty fresh fragrance and taste. It was crisp and delightful. Strongly recommend it and use the herb of your choice!!

Breakfast Enchiladas

I loved the idea! I ran with it. I added eggs (with sour cream and cheese), ground, spicy, Italian sausage and bacon. I made the hash browns from scratch, too. And I used my own red enchilada sauce. I mixed Monterey Jack with the Cheddar, as well. So ya, it was nothing like the recipe above but it certainly got me on the road to a great breaky!! Brilliant idea!!
