Another really good time!
About this Cook
Just a mom, lucky enough to be able to stay home with my kids.
My favorite things to cook
I dig on cooking Irish and Mexican.
My favorite family cooking traditions
Sitting at the table together. I didn't know this had become a lost art and it troubles me. So, I sit my family down every night and we eat and enjoy each other... or else!!
My cooking triumphs
I've pulled off some great meals, thanks to this site and a couple others.
My cooking tragedies
There've been a few of those, too, but I've repressed those memories.

Penne and Vodka Sauce
Holy macaroni, this is an awesome sauce!! The recipe is perfect as written. The market didn't have the right pancetta, so mine was diced, as opposed to the strips. Taste wise, no difference whatsoever. But I could see how it would add to the attractiveness of the dish and then seeing those beautiful little piggy strips wrapped around my fork, weaving through the linguine would be just plain art. LOL Oh ya, I didn't have penne on hand, so I used linguine. You know? As I sit here and type, I'm already getting excited to eat it for lunch tomorrow!! Enjoy, this is a truly great recipe!!

Fresh Sweet Corn Fritters
Well, I blew the recipe and they were a bit soggy but that's fully on me. Behind the damage I did, I could taste how great they would've been!! On top of soggy on the inside, they were burnt on the outside... and were still great!! I will do these again because I'm sure done right, they're little chunks of corny heaven!!

Chicken and Waffles
First time I had this ever, so I'm really happy I chose this recipe!! I was startled by the amount of cayenne and cut it in half. Big mistake on my part, there was no heat. But still... omg, so freakin delish!! I made homemade waffles with this and it was just good eatin'. No other way to describe it!!
