Simple Roasted Chickpea Snack

Pretty yummy. I cut down to 1 tbsp of olive oil and cooked on 400 for 40 min after reading several reviews which seemed just right. Great healthy snack food!

Chef John's Stuffed Peppers

This was my first time making stuffed peppers and they got rave reviews. I used ground turkey, hot turkey sausage, dried parsley and red/yellow/orange peppers instead of green. The recipe does have a bit of punch that we enjoyed, but I feel like it has a lot of flexibility to add, remove or modify as needed. Next time I'll use brown rice as an even healthier option.

Chicken Pot Pie III

This was really yummy. I used rotisserie chicken and cream of chicken soup instead of potato. I would cut the time in 1/2 next time as it was a bit strong. Will definitely make again. Oh, also added "Garlic Garlic" from Tastefully Simple.

Ham and Beans

The flavor was really good but I cooked the beans and ham on low in the slow cooker for 8 hours after soaking overnight and they're still hard and crunchy. Not crazy about the texture. I may try again but follow the true directions.

Ham Casserole

This was surprisingly delicious. We had tons of ham leftover so I decided to give this one a try and my husband really enjoyed it as well. The only substitution that I recommend is crushed cornflakes on top instead of breadcrumbs. I used a little extra ham and potatoes, just to use it up which was fine.
