Russian Mushroom and Potato Soup

this is a very tasty, simple soup. i left out the salt and used portabello and shitake mushrooms. also, i always use veg. broth and never salt anything as to me the broth is pretty salty. next time i'll try it with the sour cream or the cheese suggested earlier. Very good. Thanks!

Mashed Potato Layer Bake

Um, yeah. I probably about doubled the cheese cuz I always do. Mashed potatoes, mashed sweet potatoes, and cheese. The only way it would be better is if we found some way to add chocolate to it. Everyone liked this one. I did have to add a little milk to the white potatoes so they wouldn't be dry.

Eggplant Bake

This was very tasty even though I had to use different cheeses. Love it. Next time might try it with a marinara sauce on top. I did fry the onion and tomato before adding to the baking dish. Eggplant takes lots of oil to fry, so I alternated between oil and cooking spray. Thanks!

Colorado Mexican Rice

With some changes, this is a 5 star I believe. The potatoes and carrots were too crunchy for me, so I'd pre-cook those. Other than that we all loved it. It turned out more like risotto than browned or fried rice, but I like that. Very nice flavor. Thanks!

German Zwiebelkuchen (Onion Pie)

We do family dinner once a month with a different theme... my grandma chose German and so I made this. I left out the bacon as I'm a vegetarian and it turned out really good. She especially loved it. Thanks!

Indian Peanut Stew

Mushroom Stuffing Balls

Delicious. I also used minced garlic rather than powdered. Ended up using only about 1 1/2 cups of bread crumbs and they turned out delicious. I used portabellos and didn't have parmesan so used what cheese was on hand. Very very good. Thank you!

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

These beans were absolutely delicious. I used fresh and added a tablespoon of water to make up for the frozen ice crystals. I cooked until many of the beans were starting to brown. So good, I can't imagine I won't make this all the time.

Hot or Cold Vegetable Frittata

halved the cream cheese & left out the bread. i've made this 3 times and have never had leftovers! i just put some breadcrumbs on the bottom of the dish before pouring everything in.

Best Black Beans

These taste great and are so easy! I had to double the recipe so I ended up using one can of black and one can of kidney beans. Also added a can of diced tomatoes and a half a can of corn. Upped the cilantro to about a cup (my roomie LOVES cilantro) and added a bit of cumin. Very good! Thank you!

Easy Sugar Cookies

Very easy and delicious. Works best if you knead the dough with your hands rather than mix with a spoon. Next time I'll probably roll in cinnamon sugar before baking. Very good!

Sweet-Sour Broccoli Salad

This is very tasty, my sister made it for our father's day celebration. It's just as good the next day. Since she used veganaise instead of mayo, we had a vegan version and no one even knew the difference!

Ratatouille

Didn't seem very flavorful to me and it was a lot of chopping. I was sad to have used my eggplant in it. My roommate and I found it edible, but didn't feel the need to save the leftovers. Sorry!
