Mushroom Risotto

Delicious! I used oyster mushrooms and added peas... I love this. Didn't want to stop eating it. I used arborio rice, I don't know if that's why I needed less broth - only one can of veg broth and it was perfect! Thank you!

Mexican Zucchini Cheese Soup

Delicious! I used real cheese unstead of Velveeta, and it was great. Also added more than the spices called for and more of the broth (vegetable instead of chicken). Tastes great. Plopped in a dab of sour cream and YUM! Thanks!

Colorado Mexican Rice

With some changes, this is a 5 star I believe. The potatoes and carrots were too crunchy for me, so I'd pre-cook those. Other than that we all loved it. It turned out more like risotto than browned or fried rice, but I like that. Very nice flavor. Thanks!

This is delicious. I had to leave out the paneer the second time I made it as I was out. It's great either way. The only thing I changed was to add a little maple syrup or brown sugar as I liked it a little sweet. Thank you!

Russian Mushroom and Potato Soup

this is a very tasty, simple soup. i left out the salt and used portabello and shitake mushrooms. also, i always use veg. broth and never salt anything as to me the broth is pretty salty. next time i'll try it with the sour cream or the cheese suggested earlier. Very good. Thanks!

This was good, but a little plain. I liked it, my roommate (non-vegetarian) wasn't impressed. I'll definitely eat the left-overs though and maybe try again with additional ingredients.

Didn't seem very flavorful to me and it was a lot of chopping. I was sad to have used my eggplant in it. My roommate and I found it edible, but didn't feel the need to save the leftovers. Sorry!

We do family dinner once a month with a different theme... my grandma chose German and so I made this. I left out the bacon as I'm a vegetarian and it turned out really good. She especially loved it. Thanks!

Delicious. This was a big hit at the father's day barbeque. I used 1 cup of rice as I didn't have the other grain and half the chili powder as my mother hates spices. When I make it at home I'll use all the chili. Very good. Thanks!
