Guinness(R) Bread
The temp and cooking time seemed off when I started at 425. It started to cook really fast on too. I decided to turn down to 400 after 10 mins. Then at the 30 min mark it was done. I bake a lot and think the temp needs to be 350 and bake 40-45 min. Very good bread. It is more of a quick soft bread like banana bread.

Tuna Noodle Casserole from Scratch
too much fat. Cut the butter in half or more for the roux. Use a tiny bit of olive oil to sautee veggies. don't add the bread crumb mixture; the cheese is enough. I added brocolli and cauliflower to mine. I like to add dill or taragon to my tuna casserole.

Vegetarian Mexican Inspired Stuffed Peppers
I made this but added 3 cloves real garlic, hot chilies instead of green chilies. I used brown rice and pigeon peas. I used 2 tsp chili powder too. They were just fabulous!!
