Black Bean and Couscous Salad

I love this recipe with no alterations (although I use low sodium chicken broth to reduce the sodium content and it still tastes great)! My family enjoys this as a vegetarian dinner, not just a salad, and it tastes great cold leftover the next day. When I make this for a party, I double the recipe to be sure I have my own leftovers!

Corn, Sausage and Pepper Chowder

To reduce the sodium content I have used low sodium chicken broth and sometimes even eliminated the kielbasa and this soup still tastes and looks great! It's colorful and yummy and tastes good leftover (I've never tried freezing it though). I like the amount of cream (not too heavy) and if I want a creamier texture I puree more of the corn.

Beef Barley Vegetable Soup

I doubled the amount of barley, eliminated the celery (for a family member who doesn't like celery), used low sodium canned tomatoes and used low sodium beef broth in place of the water and beef boullion to reduce the sodium content. This soup is so delicious and freezes well.

Open-Faced Omelet

Quick, easy and delicious, all in one skillet! It't colorful and would make a beautiful brunch dish for company (if you can get it out of your pan in one piece, which takes just a bit of skill!) I've always used frozen corn for this recipe. In a pinch I've substituted sweet or plain onions for the green onions and it still tastes great. I have even used dried basil but fresh basil leaves make it taste better and look more elegant. The recipe says "1 1/2 finely chopped basil" without a measurement - I took that to mean 1 1/2 fresh leaves and it seemed about right.
