Szechwan Shrimp
I searched on and off for probably more than a year, looking for the perfect sauce for my homemade stir-fry. THIS IS IT. It is perfectly spicy and flavorful, and completely healthy (I leave out the cornstarch, because I don't need it to be thick -- runny is perfectly fine!) I double this recipe and make it as a sauce, to go with my 8-10 cups of chopped veggies (I use a whole onion, several carrots, broccoli, and two colored peppers) and 1 lb of diced cooked chicken breast. It is PERFECT. After my chicken and veggies are cooked and combined, I throw this sauce in the pan over them all, let it simmer for a bit, and eat it over rice. We have this for dinner twice once a month; it is my go-to for stir-fry now. And it's not too spicy for my less-than-two-year-old (although she handles spicy things well). I am SO grateful I found this :)

Tuna Macaroni Salad
This recipe is seriously awesome. I gave it 5 stars, even though I made some revisions, because I can tell this is clearly a great base recipe, perfect for making your own additions/subtractions of ingredients. I whipped this up for lunch because my mom was coming over and I had not planned anything, so I didn't marinate it. I used less than half the mayo it called for, and probably a little more sour cream than 1/2 c. I didn't have celery, but I did throw in a banana pepper -- seriously adds an AWESOME kick, for those of us who like that kind of flavor. SO glad I made this!! It took less than half an hour to throw together, and it is seriously DELICIOUS!! Thanks for the great recipe!

Breakfast Quinoa
Just made this recipe for the first time! It is really good! I love that I just stumbled upon another, more healthy, protein-rich breakfast :) I am a breastfeeding mom, so I did not sweeten it with honey -- I used brown sugar, so it was basically identical to how I would make oatmeal (cinnamon and brown sugar!). I actually didn't add any fruit or nuts this time, because I didn't have any on hand, but I know they will be a great addition!! Thanks for the awesome breakfast recipe!!
