Pinto Bean Pie IV

I used navy beans intead of Pinto and topped the pie with pecans as others suggested. It was delicious! I'd like to try to use less butter next time. I put all ingredients into my blender, mixed it, poured it into crust and topped with pecans.

Homemade Pancake Syrup

I use this recipe all the time, though I only use equal parts sugar and water and maple flavoring. You can prep this the night before, stir it a few times here and there , and the sugar melts into the water and you do not need to boil it at all. Love it!

Mock Strawberry Jam

12 Quarts of tasty Strawberry syrup and 3 quarts of jelly. You must use pectin with this recipe if you desire jelly and it must come to a rolling boil for at least five minutes, but mine took much longer. Check for set. I love the flavor. I didn't seed my zucchini, though I did puree it. I added a couple drops of blue food coloring in one batch for deeper color, and used crab apple pectin in one batch that lent a deeper color. Thanks for this recipe!

Vegan Red Lentil Soup

Sooo good! Even my toddlers liked it. My husband doesn't like onion, so after sauteeing, I cooked the sauteed ingred along with the water and squash, then pureed this portion and added the rest of the ingred. He loved it. What a thick and delicious soup! Thanks for this recipe.

Cheesy Baked Cauliflower

I'm not a cauliflower person, but I liked this recipe. I changed olive oil for the butter. Mixed it with honey mustard, low fat mayo, two cloves garlic and a sprinkle of less salt season all. Brushed this on to my 10 min. steamed cauliflower and grated fresh parmesan on top. Loved it and had the left overs in my salad next day.

American Lasagna

This is definitely our favorite. I make a few of them at once and freeze them with cooking directions on the tin foil. Then I always have something on hand for some one in need, or a new neighbor or if I'm running late. Delicious. Thanks for the recipe!

Enchilada Casserole II

I added the changes of most others: can of corn, and black beans. I used ground turkey and a can of mushroom soup instead of tomato sauce, salsa instead of paste. Love it!
