Cream Filled Cupcakes

This recipe is great. Those chocolate cupcakes are fantastic and rise to double! I found it hard to fill the cupcakes though, so I cut through with a knife first, but that doesn't change the fact that it is excellent. The cake is nice and moist. With the first batch, I even forgot to put the eggs in (oops!) and it turned out anyway! Although it is better with the egg and looks more glossy. The cream filling is so perfect! Thank you so much!

Oatmeal Peanut Butter Cookies

I made two versions of this cookie. The first is the classic recipe, and the second is with chocolate. I grated small bits and mixed them in with the final mixture until they were just blended, then I added some more on top when they came out of the oven. I like the classic version better though.

Crisp Oatmeal Cookies

I made "cookie cakes" with these, putting the round balls in mini muffin pans instead. They came out with a hole in the middle so I made cinnamon icing and topped each with a raisin (but I just put enough icing to fill the centre). Great outcome and taste, though since they're oatmeal cookies, I would add more next time. Also, I didn't use the coconut and chocolate chips, but that's only because I am a wuss! Super recipe. Gotta love the juiciness.

Black Bottom Cupcakes I

Used 1/3 cup cocoa instead and replaced the water with milk. It turned out great, except I glazed some with sweetened whip cream. Although I think this is a great recipe I would not make it again. It looks much better than it actually tastes. And the cake is very sticky and the paper liners stuck to the cake. Thanks for sharing all the same!

Bagels I

This is an excellent at-home bagel recipe. I used 4 1/4 cups whole-wheat flour instead of 4 1/2 cups white flour and added just about 1 1/2 tblsp more water. I also added 1/2 cup sunflower seeds. Bagels turned out soft and chewy. Perfect texture. They were a little small though, but very tasty!

B Muffins

I don't normally review recipes that I make even if they're really good, but this one I had to. I traded in oil for 3/4 cup unsweetened applesauce, the brown sugar for Splenda for Baking, and added a banana because the ones I had were pretty small. Usually when I do this, my muffins come out hard and not as moist as the real recipes, but this one came out just AWESOME! I also added 3/4 tsp salt, 1 tblsp cinnamon and a small dash of cloves for more flavour. I will definitely be making this one of my staple recipes. Never have I made a muffin that tasted so delicious (and I make some at least once a week) and had only healthy ingredients. I'm so glad you decided to share your recipe! Thank you!

Baked Oatmeal II

I used the original recipe as a great basis, but as I read other reviews most thought there was too much sugar. I cut it down to 1/4 but used Splenda for baking instead. I also substituted apple sauce for the butter, and replaced 1/3 of the cranberries with walnuts. I I was just as satisfied... doing this only cuts down the calories by approximately 25%. Also, I made them into 2x3 inch bars, so it made 16 bars... around 140 calories a bar, so I could have them as a snack instead. I also used soy milk instead of dairy milk. Over all, very tasty, a recipe to keep. The only reason I give it 4 stars is because of the quantity of sugar. Had I made it with the original measurements, it would have been way too sweet. I might even cut down on the sugar a little more next time. Thanks for sharing!

Amaretto

I've made this recipe quite a few times now. It always turns out great. I always use real vanilla and almond extracts so the flavour and colour resemble the real thing even more. I don't buy costly Disarono anymore. Everyone who tried it said it was good! I love making an Amaretto Sour with it: 1 1/4 oz liqueur, Ice, 1 heaping tsp super fine sugar and 1 1/4 sweet and sour mix... shake and serve.

Tofu Lasagna

Loved it! I made a mistake while halving the recipe and still added a cup of cheese to the mixture instead of 1/2 cup, but it was still amazing... maybe even better. Friends loved it. If you don't have any spaghetti sauce on hand, use canned tomato sauce. Next time I might add vegetables, though. But yes, I will be making it again and replacing it with any other lasagna recipe I was holding on to. Thanks for sharing!

Frozen Peanut Butter Cheesecake

Decreased the rice krispies to 2 cups and followed the rest of the recipe to the T. Impressive, simple dessert. Couldn't stop eating it, which is the only reason I haven't made it since. It is a very special treat! Awesome!

Oil Pie Crust

I was surprised to find there are no whole wheat pie crust recipes on this site, so I used this recipe as a basis for my own creation: I used 2 1/4 cups whole wheat flour, added a tsp of fine herbs and a tsp garlic powder, used olive oil instead and soy milk. Also added parsley. Baked at 350 F to make quiche. Very good! The only thing I would have done differently is cover the edges of the crust with foil so they wouldn't be as hard... the rest of the crust was nice and tender.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I needed to use up some bananas so I tried this recipe. The batter tasted great but next time I would use a different kind of berry. The strawberries made the muffin soggy and kind of dissapeared, so there were big holes in the muffins. I was very pleased with how high they rose, so I will be keeping this recipe. They tasted best fresh from the oven.

German Chocolate Cake III

Made this recipe for a birthday. I had a bit of trouble with the filling. It never set, but the way it dripped down the sides of the cake was pretty lovely. I garnished the top of the cake with chocolate whipped cream and chocolate flakes. It was for a birthday. People thought it came from the bakery. Great tasting cake!

Good Old Fashioned Pancakes

These have a ton of flavour even if you eat them plain, which comes in handy when you don't feel like pourring syrup on top. I also made pizza pancakes with them... very delish. Add tomato sauce, pepperoni and mozzarella between two small pancakes. A very easy recipe!

Chocolate Chip Coffee Cake

I would recommend using miniature chocolate chips for this cake. I think it would just taste better. Otherwise, I absolutely loved the texture of the cake. It was light-tasting and not at all heavy. You would never guess there was sour cream in it. I think it's a great recipe to use for plain white cake too. I might try that some time.

Grain and Nut Whole Wheat Pancakes

Great taste but way too liquid. I had a lot of trouble flipping them over, even though the first side was starting to burn. I added a bit more flour to the rest of the batter which helped a little.

Best Strawberry Daiquiri

I find that a strawberry daiquiri will always turn out better using fresh strawberries and superfine sugar. Using superfine sugar will disolve instantly. If you have a good blender, blend granulated sugar (alone in the blender) for a good 20-30 seconds and you'll get your own superfine sugar. The rum quantity was great. I would leave out the carbonated beverage, though, because it takes away from the strawberry flavour.

Coffee Liqueur

Very yummy. Just finished making a half recipe. I got a bottle and a half out of it. That should last me quite a while. I've never tasted Tia Maria or Kahlua, so I can't compare, but now I have coffee liqueur to put in my recipes. So simple and easy! Definitely will be making it again! Also, I strained the water-sugar-coffee mixture a few times to eliminate any undissolved coffee granules.
