Sophie's Zucchini Bread

This was a wonderful recipe. My 11 year old twin daughters made it with little to no help and it did come out with incredible flavor and texture. They did add raisins for a more contrast of flavors and texture. We finished the 2 loafs in 4 days!!!!! Not good for the waist line, but great for the culinary experience...

The Best Thai Coconut Soup

I just finished making this soup and the flavor is awesome!!! I did have one problem though, I went to my Thai store and bought the lemon grass; an ingredient I have never worked with and I asked the owner if I should leave the LG in my soup or take it out. He said, "cut small and leave it in". Well, I don't know if my LG was old or what, but it was like chewing on straw.. So, after 1 hour of simmering and no change, I removed it before added the rest of my ingredients. After that, it was all good and worth making!!!!

Apple Fritters I

Would have added a photo but they went too fast. They were awesome.. Just a few healthy tweaks... I cut the apples in smaller bite size pieces, added a large hand full of sliced almonds,(though, I am sure any nut would be great), added some fresh ground cinnamon(for slower sugar absorption). After frying and powdering I squeezed a small amount of fresh lemon (helps to break down the oil in the body and adds a fresh flavor too) and drizzled some local honey on them (helps build immunities to local pollens) ... My twins said these are a make again recipe!!!!

Mom's Zucchini Bread

My mom came for a visit and we had more zucchini than I new what to do with growing in the back yard. Well we tried this recipe as is and added pecans raisins, craisins and chocolate chips for the kids and they were amazing.. So simple and perfect texture and flavor.. I love that I can use my canola oil rather than solid shortening or butter. Much healthier!!! This is our second time making this recipe, doubled, for my mom's visit!! I read a past rating and it said not to drain zucchini, well mine had no liquid at all and the batter was perfect. It is a bit dry until it passes a certain point of mixing and than it is very moist.. Perfect moisture.. thank you!!

Chicken and Broccoli Alfredo

I tried this recipe last night for dinner and my husband and daughters are very picky.. They loved it and I did too!!!!.. It was so simple and fast and soooo tasty.. I did do some changes for added flavor, I grilled the chicken and added smoke chips...Actually left over chicken from the grill would have probably worked out too..I did not have any broccoli so I used fresh green beans and baby portabellas and replaced the milk with condensed milk for more flavor. Then I served it over baby greens and topped with sliced grape tomatoes toasted slivered almonds and a sprinkle of fresh ground cheese. This is a great recipe!!! Thank you

Tres Leches (Milk Cake)

My family and I love this recipe.. In fact it is my husbands favorite cake now..And everytime I take it to share, I have to give the recipe out.. And yes it is very sweet but, the flavor and moistness is execellent..
