Pecan Pie Bars I

I made this for my husband's office once, and for a moim's group another time, and it was such a hit! I don't even like pecans, and I love this! I did it in my big jelkt rooll pan with a lid, so I didn't even need to take it out of the pan to serve. It was plenty for a big group. I'll probably make it again for church some time. I added some toffee chips the second time, as suggested by someone pre iously. I don't know that I could even tell, honestly. I chopped my nuts really fine, since I don't like them, and it worked great.

Simple Scones

I made these for our Mommies Group's big Tea party, and they were a huge hit!! I also used my food processor to make it simple, and the whole recipe took all of 15 minutes to make. I was a little worried that the dough was too sticky when I turned it out, but they turned out really well. I used a little more than 1/2 c craisins, and zest of about 1/2 of a big navel orange. I also added about a tsp ground cinnamon and a splash of vanilla. I cut them into 16 triangles, sprinkled with sugar and voila!

Blackberry Cobbler II

This was really delicious. Even my hubby loved it, and he doesn't always like fruit desserts. I didn't have enough blackberries, by about half, but I made the recipe anyway, since we like the bread of a cobbler a lot anyway. It probably would have been better with more berries, but it was still Fab! Also, I substituted the appropriate amount of "baking" Splenda for the sugar, and I used my calphalon pot instead of my cast iron one, since I only have army-sized cast ironware. I will defititely be making this every time blackberries go on sale at Costco.

Eggs Benedict

''''' '' '' This was by far the best eggs Benedict I've eaten, and it was easy to make, too. I actually skipped the Canadian bacon, since I was pressed for time and it was just me and the kids, and I used whole wheat English muffins. I also reduced the butter by about 1/4 cup, mostly because I didn't realize until it was too late that this recipe was so big, and like I said, it was just me and the kids. Oh, and i didn't have any white pepper on hand, either. I actually substituted garlic powder. Tasted great, though! I decided to save the leftover sauce and poach some eggs again for tomorrow's lunch. It would be a great thing to make ahead and take to work. I used to have a microwaveable egg poacher I used at work that woul be perfect!

Toscana Soup

This is my hubby's favorite meal. We double it, and use about 1/3 lb. Spicy bulk sausage, plus about a pkg of plain pork sausage links sauteed in the pan, rather than baking it. I also can't find anything called "nutritional yeast" at my grocer, so I just use the miso, and it's excellent!

Beer Cheese Soup II

This was a pretty easy and delicious recipe with just a couple of minor additions. I followed a previous reviewer's recommendation of adding the cornstarch (I actually just used flour since I couldn't find the cornstarch) while the stock was boiling, and then reducing before adding cheese and cream. My additions were: some ground mustard seed, a little bit of basil, and some more garlic. I also added almost a cup of extra cheese, and topped with bacon pieces and green onions. Mmmmm.... We enjoyed this immensely with salad and yeast rolls on the side.
