Toscana Soup
This is my hubby's favorite meal. We double it, and use about 1/3 lb. Spicy bulk sausage, plus about a pkg of plain pork sausage links sauteed in the pan, rather than baking it. I also can't find anything called "nutritional yeast" at my grocer, so I just use the miso, and it's excellent!

Eggs Benedict
''''' '' '' This was by far the best eggs Benedict I've eaten, and it was easy to make, too. I actually skipped the Canadian bacon, since I was pressed for time and it was just me and the kids, and I used whole wheat English muffins. I also reduced the butter by about 1/4 cup, mostly because I didn't realize until it was too late that this recipe was so big, and like I said, it was just me and the kids. Oh, and i didn't have any white pepper on hand, either. I actually substituted garlic powder. Tasted great, though! I decided to save the leftover sauce and poach some eggs again for tomorrow's lunch. It would be a great thing to make ahead and take to work. I used to have a microwaveable egg poacher I used at work that woul be perfect!

Blackberry Cobbler II
This was really delicious. Even my hubby loved it, and he doesn't always like fruit desserts. I didn't have enough blackberries, by about half, but I made the recipe anyway, since we like the bread of a cobbler a lot anyway. It probably would have been better with more berries, but it was still Fab! Also, I substituted the appropriate amount of "baking" Splenda for the sugar, and I used my calphalon pot instead of my cast iron one, since I only have army-sized cast ironware. I will defititely be making this every time blackberries go on sale at Costco.
