Nuevo Cubano Chicken with Lindsay® Spanish Olive Picadillo Salsa

This is probably the best recipe that I have gotten off of this sight so far. It is extremely good and really easy to make. I followed the recipe exactly and it turned out perfect ... but the best thing about it is you can work with it to suit your tastes. There is a lot of room to play with the flavors. P.S. Try making this with shrimp ~ OMG even better than the chicken!!!!

Pineapple Upside-Down Cake VII

The taste is AMAZING!! I had a problem with the cake sticking to the pan and it looked like a mess when I tried to flip it out. Any ideas on what I did wrong?? I want to make this again since my Mom, Dad, Hubby and Uncle went crazy over this cake last night.

Chicken Balsamic

This is fantastic!! I added fresh garlic and otherwise followed the recipe exactly. It is SO much like the balsamic chicken that I buy at my local Italian specialty shop. I am so glad that I tried this recipe.

Confetti Salad by Jean Carper

Absolutely yummy!! It is a perfect salad for a light summer meal. We made it with turkey burgers and iced tea. I followed the recipe exactly and it is really good. Next time I might try adding some dried cranberries. Thanks so much ~ we love it!!!!

New Orleans Barbequed Shrimp

Absolutely Excellent!! The only thing that I changed was to add real garlic instead of powder and add a healthy dose of Old Bay Seasoning!! We served it over brown rice. Thank you, Thank you, Thank you!!

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

This is a super good recipe!! I am not a huge fan of salmon but my hubby LOVES it. This recipe makes it enjoyable for both of us!! I did leave out the olive oil completely to make it more Weight Watchers friendly. Otherwise I followed exactly. Thanks - I will use this recipe a lot!!!!!

Chocolate Pretzels

This is a FANTASTIC recipe. My 2 little guys (4 & 6 yrs) helped me make these for their Valentine's Day parties at school. They had so much fun and are SO proud that they made the treats themselves!!!!! Thank you for the recipe. FYI - We used Valentine M&M's in red,pink and white with square waffle pretzels. Perfect & Yummy!!

Green Beans with Bread Crumbs

Fantastic recipe!! My whole family loved these!! Even my 2 yr old. I changed it a little bit ... used all of the ingredients but sauteed the green beans in EVOO, basil, oregano & crushed red pepper. I also added a half of a small onion. After they were fully sauteed I added about 1/4 cup of low carb bread crumbs and about 1/3 cup of parm. cheese and tossed. Really ~ really ~ yummy!!!! Thanks!!

Tuna And Bean Salad

WOW this is EXCELLENT!! I made two small changes added some sliced almonds and used lime juice since I was out of lemon. I served it on a bed of baby Romain lettuce. Thanks so much for a delightful new twist on tuna salad!!

Cabbage Fat-Burning Soup

Love - Love - Love this soup. Makes enough for a small army but SOOO good. I added Kale and zucchini. Yummy! Great for a Weight Watchers friendly meal esp if you have splurged a little during the day. Dinner is 1 point!!!!

Lentil Soup II

My 1st ever attempt at making Lentil's. WOW - this soup is really good. I made 2 small changes ... veg broth to replace beef & Caribbean Jerk Seasoning to replace Italian Seasoning. Otherwise followed exactly. Very GOOD, Thanks!!

Ham Bone Soup

Great Soup!! It is very easy to make and the ingredients are easily interchangable to suit what you have on hand. I didn't have green pepper so I sauteed a bunch of celery and zucchini and added that. I used a left over spiral ham bone w/lots of meat on it. When the soup was done, I took a bunch of the meat and added it into the soup. I have gotta say - this one is a keeper. I will be making this again esp after holidays!! Thank you!
