Maria's Stuffed Chicken Breasts

What a super recipe. It is so easy to make and tastes like you spent hours in the kitchen. I took the advice of some other reviewers and halved the stuffing. I am so glad that I did even halved it is tons of filling. They come out nice and stuffed. I used a chunky Puttanesca sauce and it was perfect. The only change that I might make in the future is to use cutlets instead of breasts (I might try rolling them). My family prefers thinner cuts of meat. Thanks so much Maria ~ This one is a real keeper!!

Fava Bean Breakfast Spread

I thought this was very good and really easy to make. My husband however ... took one bite and said "I don't like it." I will probably make it again but not for breakfast. It seems to be more of a dip (almost hummos like) that a breakfast meal for us. Thanks.

Chicken Balsamic

This is fantastic!! I added fresh garlic and otherwise followed the recipe exactly. It is SO much like the balsamic chicken that I buy at my local Italian specialty shop. I am so glad that I tried this recipe.

Taco Bake II

Very Good and SO easy to make. I used a mix of Pepper Jack and Cheddar Cheese on the top and used a small can of V8 spicy to replace the water. NOT dry at all!! I think next time I will leave out the layer of chips as they got very soggy. I will just have them on the side. Overall a super recipe for a quick and easy meal ~ Thanks!!

Confetti Salad by Jean Carper

Absolutely yummy!! It is a perfect salad for a light summer meal. We made it with turkey burgers and iced tea. I followed the recipe exactly and it is really good. Next time I might try adding some dried cranberries. Thanks so much ~ we love it!!!!

New Orleans Barbequed Shrimp

Absolutely Excellent!! The only thing that I changed was to add real garlic instead of powder and add a healthy dose of Old Bay Seasoning!! We served it over brown rice. Thank you, Thank you, Thank you!!

Cashew Avocado Chicken Salad

Not one of my personal favorite recipies. It isn't bad just not anything to write home about. It seems like it needs some major flavor boost. I added lemon to the chicken before baking and a shot of lemon to the avocado. It still needs something for flavor. I probably won't make again.

Penne Pasta with Cannellini Beans and Escarole

This recipe is really good. I made some slight adjustments so suit my family. Added 1 small onion and 2 cloves of garlic (sauteed like advised by prior reviewer) also added a few shakes of crushed red pepper and topped with fresh grated romano cheese. Very good and REALLY, REALLY easy to make!! Thanks for a great recipe!!

Very Good!! I used 1/3C. of Splenda to replace the 1/2C. of sugar. It was still very sweet. Next time maybe 1/4. Otherwise super and easy to make!!

Nuevo Cubano Chicken with Lindsay® Spanish Olive Picadillo Salsa

This is probably the best recipe that I have gotten off of this sight so far. It is extremely good and really easy to make. I followed the recipe exactly and it turned out perfect ... but the best thing about it is you can work with it to suit your tastes. There is a lot of room to play with the flavors. P.S. Try making this with shrimp ~ OMG even better than the chicken!!!!

White Chili with Ground Turkey

This was good with a few minor changes. I added an 11oz can of corn and only used two cans of beans and no chicken broth. There is definately enough liquid without the broth and I think it would be too soupy with it. I took another reviewers advice and added a healthy amount of fresh lime juice and cilantro!! Extra yummy. Thanks!!

Green Beans with Bread Crumbs

Fantastic recipe!! My whole family loved these!! Even my 2 yr old. I changed it a little bit ... used all of the ingredients but sauteed the green beans in EVOO, basil, oregano & crushed red pepper. I also added a half of a small onion. After they were fully sauteed I added about 1/4 cup of low carb bread crumbs and about 1/3 cup of parm. cheese and tossed. Really ~ really ~ yummy!!!! Thanks!!

Tuna And Bean Salad

WOW this is EXCELLENT!! I made two small changes added some sliced almonds and used lime juice since I was out of lemon. I served it on a bed of baby Romain lettuce. Thanks so much for a delightful new twist on tuna salad!!

Baked Egg Casserole

I have to admit I was a little leary about mashed turnips ... but they are actually very good. I think next time I will cut back on the liquid a little. They turned out a little too wet ~ so maybe a half of a cup instead. Otherwise they are a great addition to our recipe box. Perfect for a Atkin's friendly meal!! Thanks so much!!

Kielbasa and Cabbage II

This is a super recipe. For the most part I followed it exactly with two exceptions. First I used red cabbage and I added a can of small white beans. I also pretty much doubled all of the spices. Cabbage is somewhat sweet and I wanted to give it a little kick. Very Good!! Thanks!

Best Ever Sausage with Peppers, Onions, and Beer!

My hubby LOVED this recipe and would have given it 5 stars. I wasn't that impressed. The sauce needs a little playing with. Maybe some more spices a little extra hot sauce? I will play with it a little. Thanks Robert!!
