Roast Potatoes

I used tri-color baby gourmet potatoes (I posted a pic - great presentation for company). They turned out perfect. The spice amounts and cooking time are right on. Thank you!!

Eggplant Bake

Glazed Corned Beef with Lentils

The corned beef is to-die-4!! The lentils are also very good however I need to cok a little while longer than called for and I ended up adding more broth to them as they were starting to dry out. Thanks!!

Orange Yogurt Bread

OMG!!! This is absolutely amazing!! Right now my 3yr old is tapping my back saying "Mommy,can I have more cake". I made with fresh squeezed OJ, from the zested orange. I baked in a ruffly bundt pan and it is beautiful as well as sinfully delish!! I hope it makes it 'till my hubby gets home from work ;)

Jamaican Spinach Soup

This soup is outrageous!! I followed another reviewers advice and left it a little chunky but otherwise followed the recipe as written. My only change was to leave off the red pepper since we don't really like them. Thank you so much. Healthy ... fast ... and really yummy!!!

Soy Ginger Salmon

My husband liked this. I thought the flavor was kinda off. The soy sauce was a little over-powering & the ginger got a little lost. We actually liked it better the next day over a bed of Spring Mix salad.

Cannellini Bean with Flat Leaf Kale

Fantastic with a few smal changes. First I sauteed 1 onion with the garlic in smoe EVOO. Secondly I added about 1/2 cup of white wine and a splash of red wine vinegar. Let it all sautee for a few minutes and then added the Kale and Turkey Kielbasa. I also followed other reviewers advice and used low sodium chicken broth to replace the water. Only took about 15 minutes to make and was absolutely delish!! Thank you, definately a keeper!!

New England Clam Chowder II

My husband loved this soup. It was really easy/quick to make, so I love it too ;). The only change I made was to use a little extra bacon and add it directly to the soup instead of uing it for the top. Fast, Easy & Good = 5 stars!

Salmon Chowder

My husband went crazy for this recipe. He claimed that it was the BEST soup that I had ever made. I however...thought it was a little too fishy. I used fresh salmon that had been cooked on the grill the night before. Thanks for the recipe.

Buffalo Chicken Dip

All that I can say is "WOW"! This was a HUGE hit at our superbowl party. The recipe makes enough to feed a small country however. With 7 hungry football fans we could barely put a dent in it. Next time I will half the recipe even for a party. Thank you so much - I will definately be using this one again!!

New England Crab Cakes

Perfect ~ I followed the recipe as written and they are not only easy to make but delish!! For those who opted to leave out the Old Bay and then leave a lesser rating ... there really is no substitution for Old Bay. If you are going to make crab cakes you really want to include it. I used a whole grain dijon mustard and Mmmmm, Perfect!!

Spaghetti Pie I

Good - could have used a little garlic or some more spices but overall a good start. I used ricotta in place of the cottage cheese. I think next time I will leave out the eggs as when I added them to the warm (not hot) pasta they started to cook a little and I really don't see any reason for them. Thanks for the recipe!! :)

Fair, not anything that we went crazy over. I added 3 shallots and 2x's the dill but overall it was still somewhat bland. I probably will not make again considering the calorie/fat content and the fact that it was just OK.

Hot Artichoke Dip

Just like you would get at a restaurant. I followed another reviewers advice and baked it right in a bread bowl. ( Mmmm - 2 die 4 ) I left out the green onions and added chopped spinach. The entire thing was gone by the end of the night, including the bread bowl. Thanks!!

Healthy, easy to make and yummy!! My only suggestion is to add a little garlic and red pepper to the oil before adding the Escarole and to reduce the amount of lemon juice to maybe a quarter of a cup. Very Good, Thanks!!
