About this Cook
I'm a stay-at-home mother of two who has had to learn to cook out of necessity. I now love to fix healthy meals for my family, and I'm always on the lookout for new dishes to try. I love varying our meals with different cuisines and ingredients, and I'm trying to go organic - as much as possible here in the middle of America!
My favorite things to cook
"Soul food," medieval food, stroganoff, chicken (although I can't eat it now because I have developed an allergy even to the organic kind, I still fix it for the family), and baked goods... oh, and Australian foods. My hubby is from Oz.
My favorite family cooking traditions
My kids ALWAYS help when I am baking. My son is also learning to cook (he is 5), and my daughter is more interested in eating her vegetables when she puts them in the dishes herself. I also make mini-loaves of quickbreads for the family at Christmas every year. I tried making chocolates once, and they asked for the bread back!
My cooking triumphs
My quickbreads, definitely... see above. I am also very proud whenever I make any yeast breads because those are a challenge for me. I'm also very pleased that I am finally able to 'create' in the kitchen rather than simply following a recipe. It's been a process!
My cooking tragedies
I used to be a terrible cook. I once burned rice so badly the fire alarm went off. The first time I tried to make cinnamon rolls they rose just fine, but then I burned my hand putting them into the oven and promptly forgot that I had put them in... burned cinnamon is NOT a good smell! Thankfully, I have gotten past that!

Simple Whole Wheat Bread
Best, softest bread recipe I've ever tried. I only made two loaves because my pans are bigger than hers, but it is still amazing. The whole family adored it. Perfect for sandwiches, toast, anything. Note that she says *bread* flour; if you don't have bread flour, sift your all-purpose flour before using.

Roast Lamb with Wine Gravy
The flavor of the meat in this recipe is really good, but the cooking time is way, way, WAY off!!! At 45 minutes, my leg of lamb, which was only THREE pounds, was only about half done. I think the recipe meant to say cook 45 minutes, turn, and cook 45 minutes more. That'd be more accurate, though I'm still thinking it'd be a pretty rare dish. It took almost 2 hours for mine to cook. My family (including my carnivorous dad) really thought it came out very moist and loved the flavor, though, so I will make it again just keeping in mind that it takes a lot longer to cook. The gravy is kind of grainy because of the bread crumbs, but the meat almost doesn't need it. Next time I may just add some beef broth to the drippings and thicken it a bit and call it good.

Excellent! My 5-year-old son had been wanting something with eggplant in it, so I fixed this for him. He LOVED it, and so did I. I did divide the recipe in half because it makes sooooo much, but I still put it in a 9x13 pan. Delicious.
