My 6 year old adored this recipe and asked to add it to next week's menu. That's rare from my picky little guy! I did change the recipe a little bit. I upped the parmesan to about 1/3 c. I also added Italian seasoning, garlic powder & onion flakes. I dipped the chicken in the egg, in the crumbs, back in the egg, and back in the crumbs for a thicker crust. I cooked it on a cooling rack on a cookie sheet at 375 for 40 minutes. Came out perfect. I will make it again, but I will probably play with the spices a little more.
