Crispy Coconut Chicken Fingers

I absolutely love this recipe! It's easy and foolproof. The ingredients are readily available and it's just impossible for this not to turn out great every time. My family loves it, I always get requests to "make it again".

Raw Hummus

I cannot tell you how many hummus recipies I have tried. They've all been terrible. I was actually getting ready to give up, and go back to buying it, when I found this recipe! This hummus is fantastic. It's easy, a no-brainer to make and very healthy in that it's raw. My husband and even my TWO YEAR old love this hummus!

Mushroom Blue Cheese Turkey Burgers

Excellent recipe for turkey burgers. I left out the cheese because my husband doesn't like it and it was still delicious. I did use a bit more soy sauce the second time around and I liked it better as the flavor was a bit more distinctive.

Whipped Butternut Squash

This recipe was very good! I took Doug's updated advice and baked it after I whipped it and some of the moisture did bake out of it. It still was a bit runny so the next time I made it, I put some seasoned bread crumbs on the top before baking. This added some extra "texture" to the dish and the flavor contrast was nice. By the way, I also substituted cream cheese for the sour cream. VERY tasty!!
