Raw Apple Cake

This cake looks good, makes the house smell wonderful and it's delicious. I followed the recipe (soured fresh milk with lemon juice) and wouldn't change a thing.

Beef Barley Soup

I'm sure this soup is delicious as is, but I added 2 cloves of minced fresh garlic, a couple of spashes of Worchestershire, a heaping tablespoon of Oxo French Dip mix in place of the salt (added salt, colour and flavour), a couple of bay leaves, a bit of red wine and a handful each of frozen green beans and frozen corn. I used fresh peeled and diced tomatoes in place of canned tomatoes. This is a very forgiving soup that would be hard to mess up. Add in anything you like. Very hearty and wholesome soup!

Grandmother's Buttermilk Cornbread

MMMMMMMMM.....Delicious! Just follow the recipe as is...if you don't have buttermilk, add some lemon juice to milk....works just as well.

Sugar Cookie Icing

I've been looking for this recipe for a while and finally found it. It's perfect for decorating and tastes good too! What fun, I just used regular food coloring from the supermarket, a bread knife and a plastic baggie with the tip cut off a tiny bit and look what I made! For the next occasion, I'll use a proper piping bag and some good gel or paste color and see what I can come up with....

Beautiful! I found the recipe I was looking for. These are perfect just as is. I used just butter but otherwise stuck to the recipe and these cookies are sooo yummy!! Thanks for the great recipe!

Classic Bran Muffins

Excellent muffins! I substituted one small snack-size container of applesauce for the oil and used whole wheat flour and they turned out perfectly and tasted great....super easy to make!

Spring Biscotti

I guess I just don't appreciate any biscotti other than good old chocolate-dipped almond biscotti.....these were a lot of work and turned out beautifully but just didn't get eaten.....I really am the odd one out on this one....but for me, they really were disappointing.....can't win em all....

Raspberry Almond Shortbread Thumbprints

My newest favorite cookie recipe! These have it all.....taste, texture and a very showy appearance...they turned out perfectly. I used jelly rather than jam but otherwise followed the recipe carefully and wouldn't change anything else next time. The taste of shortbread, raspberry and marzipan ....YUM!

Rhubarb Cake I

What an interesting cake this made. I doubled the rhubarb and otherwise followed the recipe closely. That was a few days ago. The cake turned out VERY moist to the point of almost having a custard-like texture. It was thoroughly cooked and took longer than stated in the recipe. I refridgerated it and it just got better and better each day since! It is a delicious, heavy, moist coffee-cake. It would probably be lighter and less moist without doubling the rhubarb but I will be making it again the same way as we really liked it.

Irresistible Irish Soda Bread

My inlaws who hail from Dublin seemed amused by this "Irish soda bread" and informed me it's nothing like the stuff they grew up with there. However, they loved it and I wouldn't be surprised if this is even better than the "real" thing! I have another recipe I use which is also called Irish soda bread and is made with whole wheat flour. My inlaws call it something else. Whatever. This is easy and delicious and I served it with clam chowder to rave reviews.

Kraut Bierocks

These turned out beautifully.....just the right proportion of dough to filling.....it made 13 large bierocks....I took some hot Italian sausages out of the casings and used more sausage than ground beef....the bread is wonderful and worth making.....I wouldn't sub anything else....I served them with homemade mango chutney and they were scrumptious!

Gerry's Chicken Enchiladas

This recipe is a time-consuming but not difficult to make and the results were definitely worth the time it took to make. I think the half pint of cream is excessive and used much less. I used one good-sized jalapeno in place of the 12 small chile peppers and added a small tin of green chiles because I couldn't find diced tomatoes with geen chiles. Great dinner and really great leftovers!

Cinnamon Rolls III

These were a really yummy treat but don't try to put all 16 into one 9x 13 pan...I made 15 in one pan.....too crowded! I used raisins instead of pecans and found there was an aweful lot of icing.....still, they were wonderful and froze well individually wrapped for lunches.

Overnight Raisin Oatmeal Pancakes

These wholesome, wonderful pancakes are more like a flat, round muffin!! Perfect breakfast for company served with fresh fruit salad and yogurt.......and excellent eaten cold for a snack later in the day. I loved these!

Pico de Gallo Chicken Quesadillas

YUM!! Very nice recipe....easy to make and utterly delicious! I made two individuals by folding over the tortillas intead of making them sandwich style as they are easier to flip this way.
