Oatmeal Peanut Butter Cookies

Excellent cookie! Light and crisp with just the right amount of chewiness. I used butter instead of margarine and added 1/3 cup more oats and they turned out just perfect. A keeper, for sure!

Gingerbread Men Cookies

A really tasty gingerbread recipe! I followed others' suggestions and subbed 1/2 light corn syrup for the molasses. Delicious! You have to work quickly with this dough!

Apple Oatmeal Crisp

Justin's Hoosier Daddy Chili

This is good for a fast chili. I followed others' suggestions and omitted chicken broth and used a half bottle of beer instead. I liked the thickness, but my husband said it could have been even thicker. Good flavors -- I substituted chipotle chili powder for one of the tablespoons of chili powder -- that gave it a good, smoky quality to it. I'll probably make it again when I need a fast chili.

Chocolate Gingerbread Trifle

A wonderful, easy, impressive-looking, delicious dessert! Everyone loved it on Christmas day. My changes: instead of crystallized ginger, I placed halved strawberries on the top with shaved chocolate curls in the center. Pretty and tasty! Let the chocolate soften in a warm place for about an hour before attempting to shave with a vegetable peeler; otherwise you'll just get bits. Will be making again!

Carrot Cake III

Excellent, moist carrot cake -- maybe the best I've ever had (no credit to me; the recipe is excellent). My husband even loved it and he normally doesn't like carrot cake! I did add 1/4 tsp. of nutmeg for a little extra flavor. Also, I used the recipe for Cream Cheese Frosting II instead of the one included. Perfection!

Ultimate Corn Bread

Very tasty and moist with good cornbread flavor. Not a traditional, crumbly cornbread, but wonderful. Needed to bake 20 minutes longer than recipe stated due to high liquid content. Will definitely make again!

Chicken Kabobs Mexicana

Very flavorful and colorful. My family enjoyed it very much. I did marinate the chicken for 24 hours as others suggested; we could taste the delicious flavors all the way through. A great make-ahead meal!

Italian Breaded Pork Chops

This was a BIG hit at our house! Very tasty and a different take on the usual "Shake n Bake" style pork chops. As others have mentioned, you end up with way too much bread crumb mixture, so I'll cut down on that next time. Otherwise, a great, simple recipe!

Cream Cheese Frosting II

A very good, simple recipe that goes great with carrot cake! Slowly adding the sifted confectioner's sugar and whipping with a hand-held electric beater resulted in a light frosting with good cream cheese flavor. I did add a little more vanilla than the recipe called for. A keeper!

Italian Wedding Soup I

Very good soup! My husband's favorite soup and now a family staple. I tweaked the recipe as suggested by others: browned the very small meatballs first, added finely chopped onions to the meatball mixture, used 1/2 gr. beef and 1/2 gr. turkey, and 1/2 the amount of orzo. A great Sunday afternoon meal.

Amazing Pecan Coffee Cake

This is a wonderful recipe. I made it in a bundt pan with topping in the middle as well as on top. I had a little trouble removing the cake from the pan, but "patched" it back together with some icing which also acted as glue for the topping to stick to. The group I brought it to really liked it! Will definitely make it again.

Wonderful flavors! I used chicken breasts instead of thighs and it was great. Also omitted the ghee. Prep was not difficult, but took a little time. My family said it's definitely a "keeper!"

Delilah's Frosted Cut-Out Sugar Cookies

I found this dough very difficult to work with. I used butter for the flavor, chilled the dough very well, but still had a terrible time. Not worth the trouble, and I really enjoy the butter flavor over the shortening.

Grilled Chicken Adobo

This is a very tasty, easy meal and we all loved the flavors. However, the chicken thighs reduced so much during cooking, they were too small to put on the grill. So we broiled them, which was fine. Because of the reduction, we were left with about 4 servings, not the 8 given. But I will definitely make this again.
