Coconut Macaroons IV

This is very much like MY grandma's macaroons, and OMG I loved them as a kid. My kids loved them while they were growing up also. She added a tiny bit of salt and a dash of almond flavoring, but I usually skip the almond. And she wouldn't use metal pans -- she greased paper grocery bags. I don't know that it makes a difference, but to this day I get paper bags and make them like grandma!! Then throw the 'pans' away. I bake them in a lower temp and a tad longer.

Bacon Wrapped Smokies

I've made these for years, and they always disappear. When the kids were younger, they'd be running in every 5 minutes or so with 'are they done yet?'. I know they're a decadent treat, and I usually resist the desserts and hi-cal stuff, but I can't resist sneaking one of these!

Beezie's Black Bean Soup

I made this yesterday. After reading the reviews, I made some adjustments and did it on the stove instead of the crock pot. I sauted the veggies, increased the spices by about half, used chicken broth for about half the water, threw in some leftover Christmas ham, and used serranos instead of jalapenos because that's what I had. We really liked it; my husband is usually critical of new recipes, but told me this one was a keeper. Paired it up with some cheese/serrano cornbread and made a great meal. It was very spicy (hot) but we like that here.

I have made these for years. My son came home in grade school raving about them from another parents' house. I am always asked to make these, and if I don't, I get chastised at the family gatherings :-)

Cherry Cream Cheese Cake

Just made this cake, and it is beautiful! I made the glaze with 1 TB of the cherry juice (I used maraschino cherries because I had them) 1 TB milk and 1.5 c powedered sugar. A little more cherry juice as that was too thick. Followed the suggestions for cutting flour to 1.75 c and adding sugar to 2 c. Only cooked it a little over 60 minutes based on suggestions, but the toothpick was clean and it seems moist. We haven't cut into it yet, but my husband tasted a little crumble that came off when I took it out of the pan and just rolled his eyes and said 'WOW'.
