Mexican Corn Salad

A few alterations, did not grill veggies or use butter as I did not think it needed it. Added some black olives and served with Salsa Chicken recipe from this site. Very good.

Amazingly Good Eggnog

I have to admit I was disappointed with this recipe given all the high ratings. It did not taste like eggnog to me, more like a liquid version of rice pudding. It was good, but just not like eggnog. That said, the recipe was easy to follow I had no problems whatsoever. The rest of my family does not drink so I omitted the rum. Maybe that is what made the difference. I might try again we'll see...

Brazilian Black Bean Stew

I followed almost everything exactly except I used a beef sausage and omitted the ham as we don't eat pork. It was delicious - but next time I think I will make it without any meat at all, it is hearty enough without it and the flavour is tasty enough to pull off a vegetarian dish. I might suggest a little more garlic and mango though.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

This made an excellent taco salad with cool ranch doritos crushed, lettuce, tomatoes, olives and ranch dressing with a sprinkle of cheese. We are having it as tacos later in the week. The only reason I did not give it 5 stars is because I think it needs to be spicier. Maybe by adding a few jalapeno peppers in with the onions? Will play with it a bit to add more kick but otherwise great recipe. Thanks!

Spicy Baked Sweet Potato Fries

I served these with veggie burgers and a salad when I had my vegetarian in laws over for supper – they were a hit! Like other reviewers, I too had trouble getting them to the perfect crispy stage. I tried them on stoneware and also on an airbake pan. The airbake pan worked best and I did broil them for a minute or so – this helped crisp some of them up but it also set of my smoke detector! Haha. Definitely have to be careful but they were very tasty served with ranch dressing to dip.

Cheeseburger Soup III

Good but I did not care for the processed cheese, will probably make again but try with regular cheddar instead or maybe cheez whiz as it has a sharper taste. I used more beef (2 lbs) and nearly forgot the onion so used toasted onion flakes instead which I think made it taste more cheeseburgery.

Bacon Water Chestnut Rolls

Update - I tried with turkey bacon and they held together very nicely and still tasted great, plus there was little to no fat to drain off. I also wrapped some pineapple which was great too. Delicious! Nice amount of kick to them. My hubby does not like water chesnuts but loved the sauce with the bacon so much that he overlooked that (somewhat until he started to just leave the chesnuts behind) now I have to find something else to wrap with bacon and use that sauce for him. YUM!

Awesome Slow Cooker Pot Roast

Good. We were not able to eat it the same day so I took the roast out and placed in casserole dish to reheat and reserved the gravy in a small kettle to reheat and thicken with a little flour/water mix the next day. I added a little garlic pepper to the gravy and served with slow cooker mashed potatoes (from this site) good supper.

Slow Cooker Mashed Potatoes

Pretty good. I would like other reviewers recommend running a mixer through them before putting them in the slow cooker. They were VERY hot throughout the meal. I did not add as much butter as what is called for and I was short a little sour cream so added a touch of heavy cream instead as it is what I had on hand and a little extra of the reserved water. Mine stuck and formed a bit of a crust on the sides of the slowcooker but all in all, tasty!

Outback Onion Soup

This was a good soup. Not exactly how I remember the one from the Outback restaurant - but good nonetheless. To make it faster I began by sauteeing the onions in a little bit of water to steam them while I prepared the broth. Then I added the onion, the flour mixture and lastly the cream and the cheese. I used slightly less water to compensate for what would have boiled off with all the simmering. By doing it this way, it only took me about 45 minutes start to finish. I also used Pepper Jack cheese to add a little kick to it. Nice soup. Esp with the croutons.

Supreme Strawberry Topping

Very good. We used it as a sundae topping on homemade vanilla ice cream. I have another recipe for a strawberry sauce that I want to try prior to comitting to a 5 star rating, but everyone did enjoy this.

Ultimate Frozen Strawberry Margarita

Mmmm. So good. I did not make exactly as recipe states though as I like them a little less strong. I only used 4oz tequila, 2oz triple sec and then I added ice and a little extra limeade (I think about half to 3/4 of a can in total). Fantastic!

Banana Margaritas

Mmmm! Very good! The only thing I might try next time is to add 1 more banana and/or maybe try changing it to 2oz triple sec and 2oz banana liquer to increase the banana flavor. It was quite subtle as is.

Wowza, so good! Tastes kind of like a raspberry shortbread cookie in a tartshell. Mmm! I can see that trying different jams would be good too. I cheated and used store bought frozen tart shells so they were super quick and easy.
