Simple Chopped Liver

This was really basic and good. easy to make and I added some garlic powder and Mrs. Dash lemon pepper seasoning and used olive oil instead of canola. YUM!

Zucchini Cornbread Casserole

Wow this was really yummy. I used a generic corn bread mix that was only 6 oz in total and next time I will use either double the corn bread mix or one that is 8.2 oz like this recipe calls for. I used my slap chop to chop/dice 5 zucchinis and one large onion. I also added few dashes of hot sauce and garlic powder. Next time I will use 3 eggs instead of two so it binds more. To avoid extra wet zucchini after chopping, I put all of the zucchini on a double layer of paper towels and spread it out and patted it as dry as I could and added salt. I did notice that the paper towels were soaked through and my casserole was still very moist but not runny. I think next time I will use extra muffin mix to have it come out more like a muffin vs. a casserole but it was still really flavorable and smelled so good while baking. I am sure this can also be done with yellow squash too.

Chicken Spectacular

I make this every year for Christmas and this year I am trying it with Turkey meat instead of Chicken. I have the turkey in the oven now and will use the turkey breast mostly and some nice thigh meat and chop it up real good. This freezes well and also can be made a day ahead of time and taken out and brought to room temp and then placed in the oven. It's so easy make and a nice one dish meal to scoop out while relaxing on a family day like Christmas. Due to our diabetes we typically avoid rice due to high carbs but on Christmas we treat ourselves to this yummy dish!

The Best Clam Sauce

I made this for just myself one day because my husband hates the smell of clams cooking in the house. It was so wonderful. I could not stop talking about it and know my husband so well I told him he would love it if he tried it. Two weeks later I was craving this dish again and I told him I was going to make it for dinner and he was not that thrilled. When he got home he could smell the garlic and took a portion of the dish I had prepared and he could not stop saying how good it was. He was even surprised that I used canned clams. He loved it and said it would be OK with him if I served this often!!! This is a guy who really does not like white or red clam sauce and as I sit and write this review (3 days later) he wants to know when I plan on making it again!! The only thing I did different was added garlic powder and onion powder to the sauce to help thicken it just a little and to give it even more of a garlic flavor. And I used more white wine...I think I did that only to mask any "bad smells" of clams that he might have encountered right before he devoured it all. Use the 20 minutes to reduce it as recommended because that really helps it. I also served this over angel hair instead of linguini.

Best Grilled Pork Chops

These were fantastic! I used a fry pan instead of a grill and marinaded them for about 2 hours and followed the recipe just as is and used Mrs. Dash lemon pepper seasoning and they were finger licking good chops! Will use this marinade again for sure!! Thank you!!

Mexican Pot Roast

This was really good and easy to make. I followed the recipe except I did not have cayenne pepper or chili powder so instead I used Mrs. Dash extra spicy seasoning. I also used Rotel instead of green chilies. I cooked it for 8 hours in my crock pot and served it with Zatarans red beans and rice and my husband loved it. The chuck was on sale for $2.99 a pound so I bought a 4.5 pound chuck and cut it in half to sear both pieces well. The searing was the "hardest" part due to the size of the meat, but you gotta sear it! I have enough left over for two more dinner meals this week and I may even freeze some if I decide to not use it all this week. I plan on keeping the broth for a soup too and it will freeze nicely. It's only my husband and I so this was well worth the $13.00 purchase.

Cheddar Broccoli Chicken and Mashed Potatoes

Well I really wanted to make this for dinner because it sounded yummy. However, I had none of the soups so I had to make my own cheese sauce. I used frozen broccoli and instant mashed potatoes. Once I cooked the chicken cutlets in olive oil, garlic and onion powder I removed the cooked chicken and cubed it and set it aside. I then cooked extra broccoli in the microwave for about 7 minutes while I was cooking the chicken. I then added the broccoli to the pan with the drippings from the chicken added the 1/4 cup of milk and about 10 slices of american cheese to the pan and stirred it up until it looked a creamy soup. Keep making sure it does not burn, I added the cubed chicken and kept stirring. Poured a portion over a serving of mashed potatoes, added lots of black pepper and salt to taste and it was very very good! Will make again and often.....
