My favorite things to cook
I tend to focus on a particular technique for a period of time and then move on to another. My current fascination is with Sous Vide cooking, though I'm still being routinely amazed by what I can grill on my Big Green Egg.
Thinking Halogen cooking will be my next experiment.
My favorite family cooking traditions
Homemade pizza - crust, sauce, everything. We laugh at pizza parlors. Homemade pasta - a bit of work but so fun. Breads - who can resist the smell alone...
Sauces - sometimes very challenging but very rewarding
My cooking triumphs
A good friend of mine is the head chef of the local culinary institute. He tells me (though I don't believe him) that I am a better cook than most chefs he knows. He sometimes brings me to his classes to basically make the point that your success as a chef is mostly about your passion for food, not your formal training. I try not to make him look bad. ;-)
