These waffles turned out great! The recipe made 7 waffles in my square Food Network Belgian waffle maker, and they were perfectly light and fluffy! I did double the sugar as some other reviewers suggested and made sure to beat the eggs well before adding the other wet ingredients. Didn't find it necessary to separate out the whites. Thanks for the great recipe!

Peanut Butter Cup Cookies

These cookies are very good, though not quite special enough for 5 stars in my opinion. I made a few adjustments for my convection oven - baked the cookies at 360 for 5 minutes and they turned out just right. I also followed the suggestion of another reviewer and used mini baking cups on a regular cookie sheet. I was able to bake my entire batch (50 cookies) at once and give the cookies a festive touch with pretty Christmas wrappers. Also made sure to freeze my peanut butter cups. These little cookies will make a nice addition to my cookie trays!

Chocolate-Mint Brownie Cookies

Great tasting cookie! I agree with other reviewers that the peppermint extract is unnecessary. I added extra vanilla in the same amount, and the flavor was still very minty from the chips alone. Otherwise, followed the recipe as written. Disappointed that it claimed to make 6 dozen cookies - I only got 3 1/2 dozen small cookies (small enough for a dozen per sheet) Would have made a double batch otherwise. I may try to come up with a way to "pretty" them up so that they are a little more festive, but a great recipe overall :-)
