Grilled Garlic Artichokes

This is the only way I make artichokes, I love it! Make a little bit more of the garlic oil mixture and mix it with a couple of tablespoons of mayo to dip the tips of the artichoke in. It's amazing!

Asian Coconut Rice

I made this exactly as directed and it came out perfectly. The light coconut and jasmine rice taste went perfectly with the pork lentil stew that I paired it with. A keeper recipe!

Lentil Soup III

Tasty, I had to substitute tomato sauce for the paste because it was all I had on hand. I threw in some fresh chopped spinach. I'm sure the soup will be even better tomorrow.

Chicken Soup With Black Beans and Corn

Pumpkin Cake II

I made this in an emergency and it was a hit at the office pre-Thanksgiving potluck. The only thing I did different was add about 1/3 cup Captain Morgan Rum to the batter. I sifted powdered sugar on the top just before serving. The LOVED it.

Totally Groovy Chocolate Fondue

This was sooooo good. Everyone was stuffed after my dinner party and didn't want dessert...until I brought this out. 6 people ate almost all of this! I used 3 tablespoons regular brandy and 2 teaspoons maraschino cherry juice since I didn't have cherry brandy. 6 tablespoons of heavy cream and a bit more cinnamon than the recipe called for. They all thought I used an expensive chocolate. I told them it was French chocolate...Nestle, LOL

Oh my gosh, these were wonderful, the hit of the party. I added ranch seasoning to the cream cheese. The hostess lives on Penguin Way so she was thrilled.

Jalapeno Popper Spread

This is awesome! I made it for a football get-together and everyone loved it. My chilis & jalapenos were really mild so I added fresh jalapenos. Remember...the creaminess of the dip really cools the heat of the peppers. I baked it with panko crumbs and a drizzle of olive oil. Served with toasted french bread slices...it disappeared in minutes.

Mahogany Chicken Wings

This recipe is soooo good! I used fresh ginger and took the advice of cooking down the marinade, it came out nice and sticky. I didn't have the chile sauce on hand and there are a lot of options in the grocery store so I went to the chinese section and bought ground fresh chili paste. (Be careful, the sauce didn't taste all that hot until after it was cooked down.) I used 5 teaspoons and the wings had great kick to them...perfect with a nice cold beer on Superbowl Sunday.

Golden Rum Cake

WOW!! This was great, I made this by request for a friend's surprise 50th birthday. It was a huge hit. I wish I could have let it sit for a day but it was wonderful anyway. I made it with Meyer's Rum and sliced almonds (it was what I had on hand) and everyone raved about the cake. Thank you for sharing!!!

Beth's Spicy Oatmeal Raisin Cookies

Wow, these are great! The perfect blend of crispy outside and chewy inside. I followed the recipe as directed with one exception. I don't like biting into whole cooked raisins (personal preference) I boiled and plumped 3/4 cup raisins, drained them and then processed them in the food processor with the butter and sugar mixture. Then I proceeded with the recipe as directed. My friends wolfed the whole batch down in a couple of minutes!

The Ultimate Chocolate Chip Cookie

I've been making these cookies for several years. Everyone LOVES my cookies. I love to see the look on my friends faces when they take the first bite. These taste nothing like the usual toll house cookie recipe. The dough freezes very well and my kids make these all of the time. You can also replace the chocolate chips with toffee bits, (the kind without chocolate) they are to die for.

Easy Dump Cake

This was a HUGE hit last night at a party. Made it exactly as directed.I sifted some powdered sugar over the top to pretty it up a bit. I was actually trying to find a recipe that a friend gave me years ago and looked here for something with similar ingredients. Found this one and with a little tweaking was able to reconstruct an old favorite. Big bonus...I was able to bake two fabulous cakes last night that were the talk of the party! To make the other cake I reduced the sugar to 1/3 cup, exchanged the chocolate pudding for vanilla, exchanged the choc. chips for toffee bits, (the kind that also has chocolate like a Heath or Skor bar) and put in half the batter then half the toffee bits then the rest of the batter and ended with the toffee bits. YUMMMMM I will warn you to remove the cake about 5 minutes after removing it from the oven. The candy will stick to the sides so you may have to remove portions from the pan. A sprinkling of the powdered sugar helps to disguise any "cutting and pasting" Thank you so much for posting this recipe you helped me to revive a much loved cake!
