Soft Mahi Mahi Tacos with Ginger-Lime Dressing

Reviewed: Jun. 4, 2014
We made these last night and they were fantastic! We made half of the fish exactly as the recipe describes and the other half we used "Tom's Blackening Seasoning" (from this site) instead and it both were delish! I used frozen fruit but I know fresh would have been way better! And I added a bit more lime for the sauce (I ended up just squeezing the entire thing to make the sauce thinner). Next time I am going to try plain Greek yogurt for a healthy spin. Thanks!

Sunday Morning Lemon Poppy Seed Pancakes

Reviewed: Jun. 4, 2014
These pancakes are AMAZING!! I like to make mine on the thinner side so once I complete the mix I usually add a little bit of water to make it the right consistency (where it drips of the spoon immediately with a steady stream-don't know how else to explain it). I top them off by sprinkling them with a bit of powdered sugar and some organic blue agave nectar sweetener (in place of syrup). Delish!!!

Seven Layer Taco Dip

Reviewed: Jul. 5, 2013
I made this for the 4th and everyone loved it. I also decorated the top to look like a flag using black olives sliced up and formed stars and cherry tomatoes sliced for the rows. The cheese was the top layer to pull it off. I realized later that I could have used white cheese to make it look even better. I will make this again very soon as it was so easy and a huge hit!

Italian Bread Bowls

Reviewed: Feb. 14, 2013
These were great! I used half of the recipe and threw on some yummy seasoning on top of the bowls during their last set it in the oven. They didn't rise as much as I expected (I think my "damp cloth" was too heavy) so next time I might not make it damp at all. I made these on Valentine's Day and cut them out in heart shapes. It was so cute! I made the garden fresh tomato soup recipe with these and it was all delish!

Lemon Piccata Whitefish

Reviewed: Jan. 18, 2013
I followed the recipe exactly and it was AMAZING! My husband also made yummy groaning sounds (he took the 1st bite) and then I, of course, added to the musical harmony of happy groans. I used Trader Joe's Swai Striped Pangasius (in a red and blue bag). It had a wonderful texture. I hate fishy fish and am a tough critic when it comes to fish but I would make this anytime...so easy too! Oh and I used Chardonnay for the wine. For the side, I made TJ's Mulitgrain Blend (wild rice) with Vegetables (in bad-frozen section)- so easy, so delish! THanks, Kathy!
