Soft Mahi Mahi Tacos with Ginger-Lime Dressing
We made these last night and they were fantastic! We made half of the fish exactly as the recipe describes and the other half we used "Tom's Blackening Seasoning" (from this site) instead and it both were delish! I used frozen fruit but I know fresh would have been way better! And I added a bit more lime for the sauce (I ended up just squeezing the entire thing to make the sauce thinner). Next time I am going to try plain Greek yogurt for a healthy spin. Thanks!

Sunday Morning Lemon Poppy Seed Pancakes
These pancakes are AMAZING!! I like to make mine on the thinner side so once I complete the mix I usually add a little bit of water to make it the right consistency (where it drips of the spoon immediately with a steady stream-don't know how else to explain it). I top them off by sprinkling them with a bit of powdered sugar and some organic blue agave nectar sweetener (in place of syrup). Delish!!!

Seven Layer Taco Dip
I made this for the 4th and everyone loved it. I also decorated the top to look like a flag using black olives sliced up and formed stars and cherry tomatoes sliced for the rows. The cheese was the top layer to pull it off. I realized later that I could have used white cheese to make it look even better. I will make this again very soon as it was so easy and a huge hit!
