Meatball Nirvana

I had to omit the onion, garlic and bread crumbs, but I subbed with extra Tuscan Sunset (Italian seasoning from Penzey's), and I used cornflake crumbs instead of bread crumbs, and lactose-free milk instead of regular. I used less crushed red pepper (kids!) but we all enjoyed these! Thanks, lth! I'll make these again!

Gluten-free Oven-Fried Catfish Fillets

Made this gluten/wheat/lactose-free and it was wonderful! I used catfish fillets, buckwheat flour, lactose-free milk, and cornflake crumbs. I'll make this again! Sprinkled with lemon juice upon serving. YuM!

Crackers a la Yvette

Even my 10&12yo kids enjoyed these! I'm trying a 2nd time using half olive oil and half canola, adding a little Parmesan, the red pepper flakes, and some cayenne. This is the copycat recipe I've been looking for for Texas Firecrackers, which sell for $5.79 for 1/2-pkg at a local store!

The Perfect Meatloaf

The only changes I made were to use onion powder instead of chopped onion, and instead of cider vinegar, I used balsamic. Thanks, SGma, this was wonderful, and kids and hubby loved it! We're having leftovers tonight!

Browned Butter Vegetables with Almonds

Best Ever Creamy Soup

Must've been operator error, but my soup turned out very green! Dear Daughter just got clear braces and can't eat foods that will stain. I made this soup just for her, and halved the recipe, using 3 oz spinach and a head of broccoli, but it was spinach-colored dark green. It tasted fantastic, but for the next two years while she's in braces, I'll have to find a potato soup recipe. I'll serve the remainder of this tonight to the other 3 family members. Beware, this makes a ton of soup!

Baked Corn Casserole

Made w/o chilies, used onion powder since family dislikes onion chunks, topped with breadcrumbs instead of onion...call it operator error, but I'm reviewing this for my own records later on...it just tasted like cream-cheese coated corn kernels. DS loved it but I guess I was looking for a more bread-y dish. Thx for the post, but I won't make again; sorry to upset the reviews with my own tweaks.

Slow Cooker Mashed Potatoes

Made these for a church potluck today. They were really good, but I added more garlic and some season salt. I added about a cup of the potato water, and then a little half-and-half because it seemed like it needed something more substantial than milk. NOTE: the whole stick of butter just floated on top, even after stirring. Next time I'll heed the reviews and only use 3-4 tbsp instead of the whole stick.

Pat's Mushroom Saute

We LOVE these! I use 2 tbsp butter and 2 tbsp olive oil, and about 1/4 cup balsamic vinegar, then I sprinkle about 1/2 tbsp of Italian seasoning (best from Penzey's). The photo shows onions, which would be good by themselves in the same spices on fajitas, but not with the mushrooms, IMHO. Happy cooking! TRY THESE!!

Honey Chocolate Pie

Good Lord, this was so sweet, it made the teeth curl!! Of course the kids 11&9 loved it, but dang, this was so sweet it refused to set, so we kept it in the freezer, then hubby and I could only eat the crust. Gosh, this is freakin' too sweet, and I love sweets! Sorry but I won't make this again, I'll need a shot of insulin first!

Sloppy Joe Sandwiches

This is great with ground turkey, for a healthier version! Kids loved it. I added half a roll of leftover breakfast sausage, then used my potato masher to crumble the mixture into smaller bits. Served on wheat buns. DS & DD both loved it!

Cuban Midnight Sandwich

Pretty good. DS dislikes mayo, so I only used a little, and mixed it with dijon mustard and balsamic vinaigrette dressing. Didn't have pickles. Served on King's Hawaiian rolls and used the Foreman grill. Thanks for the post!

Ham Broccoli Braid

Great Pampered Chef recipe! I halved it for our family and added 1/3 cup sour cream instead of mayo, and used honey mustard but culd barely taste it. I mixed ham, broccoli (cut up), no onion or parsley, and put on dough that had been cut, then I layered pieces of swiss on top, then folded dough over. Sprinkled garlic salt and Penzey's Tuscan Sunset (Italian seasonings) on top of dough, and baked 25 mins to perfection.

These were really good on a cold day. Normally I don't eat tomatoes; just never developed a taste for them; however, on these, the tomatoes taste so fresh and sweet! Thanks for expanding my palate.

Spicy Glazed Pecans

Excellent! I added 1/2 tsp each of cinnamon and vanilla, then added 4 dashes of ground cloves and nutmeg. Quick, easy and delicious, and I'm making for 3 families at Christmas! Thanks for the recipe, this one's a keeper!

Sukhothai Pad Thai

Flavor was pretty sweet. I'm naive when it comes to rice noodles, so this might be operator error; however, although I let my noodles soak for an hour (used Caravelle per another review), they never softened in the pan. They were chewy, like rubber bands instead of noodles.
