Awesome Grilled Cheese Sandwiches

The bread came out a little crunchier than soaked in butter in the pan, but it sure took less effort to bake the sandwiches in the oven!

San Antonio Taco Salad

Very fast to put together! I baked our flour tortillas, but since they were wheat, they took a lot longer to bake. Served with homemade ranch dressing, and the family said they'd like to have it again.

Creamy Buttermilk Dressing

I forgot to add the lemon juice or vinegar, and I added a generous amount of Italian seasoning, along with several grinds of fresh black pepper. It was a little thick, so I added buttermilk to thin it out. This dressing improves as the flavors blend, so I let it sit overnight...delicious!!

Super Fast and Easy Chicken a la King

A little bland, mostly because I hate canned soups, but I made this when we didn't have much time for dinner. I added 8oz sour cream to lighten the canned-taste, and used chicken broth instead of water. Toward the end, I added 1 tbsp corn starch to 1 tbsp cold water, stirred in, and let it boil for 2 mins to thicken it up a bit. Due to son's dietary restrictions, I used diced zucchini and fresh sauteed mushrooms instead of peas. Served over large grands biscuits, and the fam went back for seconds. Will probably make again.

Fruity Fun Skewers

Made these yesterday for a poker night. I thought I made way too many (36 for 8 people) but by the end of the night, they were all gone! I made fruit dip with marshmallow creme and 8ozs cream cheese, with a splash of vanilla and 2 tbsp lemon juice to go along with. Will make again!

Layin' the Chocolate Smack Down

This is almost the same as the Chocolate Trifle recipe. The only difference I add is 2 tbsp instant coffee to the chocolate pudding as it's being mixed, to make it more like a mocha trifle. If you let it sit overnight, it's even better.

Bacon Wrapped Green Beans

Tried a small batch before taking to a family gathering where they're accustomed to their meals being served from a fast-food window. The small batch passed the kid test (10 & 12) and I went back for seconds. After sprinkling with brown sugar, I put seasoned salt on the green beans sticking out. I steamed fresh green beans for 5 mins after snipping the ends off then baked at 375 for 25 mins. to make sure the bacon was cooked. They passed the test: I'll make them for extended family with undeveloped taste palates, and I'll cross my fingers!

Olive Salad for Muffalettas

This is more delicious if you let it sit overnight in the fridge, so the flavors can blend. Don't cut the oil in half!, per other reviewers, unless you're using this as a dip for crackers...the flavored oil soaks into the bread and helps to flavor the whole sandwich. Really good with mortadella ham, dry salami, and even turkey, and provolone cheese. I used emeril's muffaletta recipe for the meats, and I like to serve this at DH's poker games; never any leftovers!

Basil-Lime Sorbet

Even though I halved the sugar in the simple syrup (after reading other reviews), this was teeth-curling sweet. Guests' comments: "unusual...", "wow, that's strong," and "basil??" I liked the idea of using it with rum added, but probably won't make again. Thanks for the post, it was nice to do something unusual!

GF-WF-DF Meatball Nirvana

I had to omit the onion, garlic and bread crumbs, but I subbed with extra Tuscan Sunset (Italian seasoning from Penzey's), and I used cornflake crumbs instead of bread crumbs, and lactose-free milk instead of regular. I used less crushed red pepper (kids!) but we all enjoyed these! Thanks, lth! I'll make these again!
