About this Cook
I am an Electrician who enjoys cooking for my family and friends. I find it relaxing to cook, especially on the weekends when I have the time to tinker. I really appreciate Sunday afternoons when I get to cook, watch a Packer game, and sip on a Beer or three, or six :). I enjoy taking the kids to the beach, Boating, Fishing, Camping, Hunting, Backyard Barbecues, and Eating good food which I can incorporate into any of the above mentioned interests!
My favorite things to cook
I have a lot of favorites but if I had to pick one I would say I enjoy Smoking the best. I do all my smoking on a Weber grill, It has its disadvantages but it works pretty well for the backyard BBQ's I like to host.
My favorite family cooking traditions
Thanksgiving Turkey and trimmings, Christmas Prime Rib dinner, and making new ones!
My cooking triumphs
I recently was asked to cook for two Large parties The first of which involved 20 pounds of Jamaican Jerk Chicken, Grilled Venison Steaks with a Mushroom wine sauce, Grilled Lime and herb Shrimp and Italian Chicken Breast for 25 People for a Post golf outing party a friend of mine hosts every year his Sales Reps, Shortly after this party I prepared 30# of Jamaican Jerk Pork, 10# BBQ Pork and 20# Jerk Chicken, for 75 people all on my trusty Weber grill! Took 12 hours and two smoking sessions to prepare the second party and my wife was tired of all the food taking up space in our fridge marinading for several days , but with an apology, several Beers,and due dilligence I was able make something that everyone enjoyed! Whew!
My cooking tragedies
My first attempt at Venison stew. I still get about it .....You would think after 24 years your buddy would forget about that one after all the successes but it was that bad......not to mention he's just that kind of friend...:)

Cream Corn Like No Other
This was very good! I rated this a four only because I had to double the amount of corn the recipe called for and thank god I had enough corn. I used fresh corn off the cob to create it and measured out 20 oz ( 1-1/4#) of corn but when all was said and done I needed 9 cobs to cover the cream. I doubled the butter just cuz and used the heavy cream the recipe calls for Thanks for this one.....Flavor was awesome and my kids loved it!

Homemade Chicken Enchiladas
Good recipe... If I had added rice like Homechef-81 I think it would have made all the difference. I may try Spanish rice next time. I used a can of diced tomatoes with green chiles instead of green peppers and tomato sauce which added a nice heat. I would also omit the Monterrey Jack cheese in the filling due to the salt it adds to the dish and just use the full amount of cream cheese using more chicken. I used twice the amount of chicken the recipe called for, and it made the consistency of the filling just right....I will try this again with these minor adjustments and see how it goes.

Perfect Sesame Chicken
This was excellent! Followed recipe to the letter. I used the how to video because of the adjustments that were made by others and it is absolutely perfect. I plated a layer of rice, oriental stir fry veggies, chicken then poured a healthy portion of sauce overall. Thanks for this one!
