Irish Soda Bread

I have nothing to compare this to as it's my first time having Irish Soda bread. That being said we loved it. I used all the raisins this time though I think as previous reviewers have mentioned 2 c would be plenty. I'm not normally a fan of caraway but together with the raisins it worked well in this. I feel like more reviewers should have noted that this dough is not the same consistency as one would normally think of bread. A few touched on it's "stickiness" but it's much more than that. I would say it is closer to the consistency of muffin or loaf bread mix. Finally, I baked it in a buttered deep dish pie pan for 65 minutes. It rose nicely and had a great crust. Chewy Coconut Bars

These were good. I felt that 1 1/2c sugar would have been too sweet for us combined with the chocolate chips and the coconut so I cut it back to about 3/4c. Next time I would cut the chocolate back to 1c but I'm also not a huge chocolate fan. There was just enough coconut flavor without being overwhelming. Served with a scoop of lite vanilla ice cream. Definitely keep it in mind for next time. Thanks for the recipe

Cabbage Rolls II

This was very good. As others suggested I did double the sauce and I agree it would have been rather dry had I not. The only other changes I made were to use ground turkey instead of beef and to add some garlic powder to the meat mix. Served with mash potatoes. Thank you for a great recipe.

Creamy Strawberry Crepes

These were great! I cut the powdered sugar back to about 1c and omitted the lemon juice and zest. I also used a different crepe recipe that calls for all milk (no water) and has baking powder.

Breadsticks with Parmesan Butter

These were great very much in texture and taste as Olive Garden. The only changes I made weere to half the recipe using only the yolk of the egg and leaving out the parmesan. Oh and I had these rising for dinner when something else came up. Punched it down and put in the fridge pulled out the next night to shape and cook.

To Die For Blueberry Muffins

These were very good. I would say it makes 8 average sized muffins. Next time I will cut back the sugar at least to 1/2 cup these were very sweet for us. They were however, very moist. I used frozen berries and had no problem, just make sure not to over mix. Thanks for the recipe.

Chocolate Banana Bread

Very moist. I made a few changes based on personal preference but I don't think any of them would effect the original recipe. Instead of 1c butter I used 1/2c butter and 1/2c applesauce, cut the sugar by half and then did 1/2 white sugar and 1/2 brown.

Pumpkin Crunch Cake

This was great. Only used 3/4c of sugar and it was plenty sweet for our taste, only half the box of cake mix and I really think anymore would have been way too much, and about 1/3c of butter instead of 1c once it was cooked the butter had spread over the surface so there weren't any dry cake mix spots that some other reviewers have noted. Thanks for a new fall treat.

Meatball Nirvana

These were ok. I'm not sure what it was exactly but for us they tasted a little off with tomato sauce. I think they would be a better stand alone meatball. I cut the red pepper back by half and while it wasn't hot it did leave a after taste that I guess I'm not used to in meatballs.

Shanghai Noodle Salad

This was great.Only changes were to Udon noodles and add sriracha sauce. Oh I also grilled some pork chops and threw them in and julienned the veggies instead of matchstick.
