Caramel Flan

Reviewed: May 2, 2013
I felt so hesitant to make this but I am SO GLAD. USE MILK INSTEAD OF WATER THOUGH! Creamier and more flavor! I did mess up on the caramel part several times until I realized that you have to stir it (unlike others have said) or else it doesn't work. Also, if it dries fast and starts to crack that's normal don't worry it will turn into liquid again when baked. Also, I used 1 cup of sugar. I had to bake mine for longer. My parents were super impressed and said it was just like they'd had at restaurants. My mom said it was the "BEST DESSERT EVER!". I had never had flan before so I don't know how to compare but I love custard so I decided to try it. I really like this and will probably make it a lot and it's so easy! This is great stuff! It seems so fancy and impressive yet it's easier than chocolate chip cookies.

Apple Squares

SO great. Don't use the topping it calls for, make a crumble using brown sugar, melted butter, flour, vanilla, salt and cinnamon.

Authentic French Meringues

Reviewed: Nov. 30, 2012
My mom use to buy these when I was a kid and I was happy to find out I could make them. I use white sugar in these from now on though, the first time I made these with powdered sugar they were a little too crunchy and sweet tasting. Oh and rainy days do actually effect these I have found out so make on a decent-ish day. If you don't have a copper bowl use a little over 1/2 tsp of cream of tartar after they start to foam IT MAKES A HUGE DIFFERENCE!! I add vanilla in mine. OH, and I don't like the idea of having a spoon hold open my oven (that's actually bad for it) so I turn the heat up a bit and cook them for an hour and they turn out great! For Halloween I made these orange and drizzle semi-sweet melted chocolate over them, they looked great and taste really good! I have made these a lot, they are so easy and good to make when you run out of ingredients but want something sweet. You can pop a lot of these babies onto one baking pan, I like that. I even halved the recipe and made loads. They go quick around here. I LOVE THESE! You don't feel bad about eating a bunch either, just tell yourself they are essentially air, but really good air. And HEY THESE ARE CHEEP TO MAKE! Go for it.

Pumpkin Chocolate Chip Muffins

Reviewed: Nov. 30, 2012
These were pretty good. They didn't have a whole lot of flavor but I also didn't want them to have as much spice as pumpkin pie or pumpkin bread. They are unique tasting. I made a caramel icing for them and that really made these muffins shine, without it it would have been kind of bland. I probably used a cup or so of pumpkin. They had a fabulous texture! My family enjoyed them so that makes it worth it, I don't think I'll be making these too often though.

Basic Pasta

Reviewed: Nov. 30, 2012
My whole family was excited about this, they loved it! I made this especially for my mom who is crazy about homemade pasta and she talked about it for days. I have a family of 9 so it took awhile to make but I love to cook so I had no problem with it, I made 6 batches and it fed us all. The dough actually only takes a few minutes to make! I used more water then it called for and I also used a lot of olive oil and it was nice and smooth and easy to roll out. Definitely good to use a pasta maker. My little siblings had fun running it through the pasta maker and seeing it cut them. I think i'll try semolina next time to see how that goes. I was scared to make this but it was way easier than I thought. Also, it's nice because these cook SUPER fast, like 30 seconds. On a super ambitious day I will try raviolis. Make it, your loved ones will love you even more!

Butter Cookies V

Reviewed: Nov. 30, 2012
My brother requested that I make cookies that taste just like these one Christmas butter cookies my parents would buy when we were little so I made these. He said they tasted just like them so I was verrrrry happy. Also, I had the Royal Dansk kind the day before I made these and they are pretty similar! I do everything the same except I trade the half cup of white sugar for brown sugar to add more flavor. I coated the top of the cookies in red and green sugar sprinkles for the holiday season. I also have made a powdered sugar/butter/whipping cream glaze for them. It's nice to make a simple tasting cookie for a change. My mom LOVES these and always requests me to make them. I would suggest dipping them in sugar or sprinkles otherwise they might be a bit boring. These are great with tea!

Brownie Frosting

Reviewed: Nov. 30, 2012
I Just made this for some chocolate cupcakes and I was impressed since it's very hard to find good frosting recipes that don't call for special items that you wouldn't normally have. This was really easy and really tasty! It does dry very fast so make sure you have your item baked before you make it. I still had some cupcakes baking when I made it so by the time it was done it dried in the pan but I put a little water in it and reheated it a bit and it worked fine. Definitely fudgey, very sweet but in a good way so that doesn't knock down any points. I made everything exactly how it said except I added a dash of salt and next time I'll probably add half a tsp of instant coffee powder to enhance the chocolate flavor. I used nestle semi-sweet chocolate chips. I have a lot of siblings and they all liked this recipe so that makes me happy! This would be good on a lot of different desserts, not just brownies.
