Cheesy Butternut Squash Pasta Sauce

Reviewed: Oct. 31, 2011
Loved it! My changes: only had Parmesan on hand (and added a little extra), added fresh Chanterelle mushrooms to the sauté, and added a little cumin, thyme, oregano and parsley. Served over rotini pasta with crumbled bacon on top. Mmmm!

Butter Pecan Cookies

Reviewed: Dec. 20, 2009
These are so delicious! I followed the recipe almost exactly. The only differences: left the dough in the fridge overnight and rolled the balls of dough in sugar before baking. I will definitely make these again, for myself and for holiday gift-giving.

Grandma's Five Cup Salad

Reviewed: Nov. 16, 2011
It doesn't get any easier than this! I've always hated Ambrosia-type salads because they are cloyingly sweet and drippy and full of marshmallows which I detest. Using sour cream instead of whipped topping and no fruit cocktail makes all the difference in the world! This has the perfect amount of sweetness for the tangy tropical fruits. I didn't even mind the marshmallows! Yummy!!

Pico De Gallo

Reviewed: Apr. 3, 2009
A good basic recipe. I changed most of the amounts though. I used half a large onion, two tomatoes, a large handful of cilantro, omitted the green onion, and two cloves of fresh garlic in place of the garlic powder. Also I added lime juice, red wine vinegar, a little oil, and fresh ground sea salt and pepper to taste. It was good enough to eat some right away but I'm looking forward to tomorrow!

Creamy Au Gratin Potatoes

Reviewed: Aug. 31, 2011
Took the other reviewers suggestion and chopped the onion then sautéed with two large cloves garlic. Used 2 cups sharp cheddar (to finish off a pre-grated bag). Uncovered and topped with bacon crumbles, crushed buttery round crackers, green onions and a sprinkle of paprika for the last 20 min. Used a 9x13 glass pan. Seemed like too much for a 9x9. Fabulous!!

Cajun Crabmeat Au Gratin

Reviewed: Aug. 30, 2011
My five-star rating has to be qualified: I'm giving this recipe five stars AS A DIP, not an entree. It is far too rich to eat a serving as a main course! But that's not a complaint; it's delicious! It was a huge hit and we'll have it again. My alterations were as follows: increased the creole seasoning to 1 1/2 tsps, reduced salt to 1/2 tsp, used all sharp cheddar and baked most of the green onions in the dish, reserving a smaller amount for the topping. Fantastic!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Dec. 20, 2009
We love these cookies! My brothers both say they are the best cookies they've ever had--of ANY kind. The only change I made was to use all butter.

Chocolate Mint Candies Cookies

Reviewed: Dec. 20, 2009
These cookies are fantastic! Sprayed the cookie sheets with Pam and used half of an Andes mint on top of each cookie. They are best warm from the oven.

Easy Broccoli Quiche

Reviewed: Dec. 9, 2007
Super easy and loved by all (including my "real men don't eat quiche" brother). Used 3 eggs and 1 cup milk, 2 1/2 cups broccoli, sharp cheddar mixed with a three cheese blend, and added 1/2 cup diced turkey ham. Thanks for a great recipe!

Paleo Chili

Reviewed: May 13, 2014
I hate to be one of those reviewers who make a bunch of changes to a recipe BUT I think it would only be more delicious made as written! I had beef on hand so that's what I used and I omitted the pork sausage (made up the difference with beef) and used only 2/3 of the chipotle pepper in order to keep the heat down for my 3 year old. Also, red and yellow pepper is what I had on hand. It's amazingly flavorful even without the omitted ingredients. I'd love to make a batch for just myself and my husband with all the spicy goodness but don't hesitate to make this for a family of all ages with some slight tweaks. This is going in our regular rotation!!!

Crescent-Wrapped Brie

Reviewed: Jul. 15, 2010
I too accidentally bought the buttery crescents which tasted fabulous and I have to admit, since it was just for us I didn't bother making it look too fancy--but it still looked great!!! It must be the egg. Served with sliced baguette and apricot preserves. Fantastic!!!

Quinoa and Black Beans

A fantastic twist on the traditional red beans & rice. I didn't have cilantro so I substituted dried parsley which worked fine. I ate it until the leftovers were gone!

Fabulous Cilantro Pesto

Terrific! Subbed lemon juice for the vinegar but otherwise followed the recipe as written. Good kick--nice and garlicky! I will try blending in some chipotle peppers next time for some tex-mex style.
